- Try this interesting variation of poha with barnyard millet and forget the regular version instantly!
MILLET POHA
Ingredients
1 cup banyard millet (samo)
2 tbsps oil
2-3 tbsps raw peanuts
1 tsp mustard seeds
½ tsp cumin seeds
2 green chillies, chopped
10-15 curry leaves
2 medium onions, chopped
Salt to taste
¼ tsp turmeric powder
½ tsp sugar
1 lemon wedge
2 tbsps chopped fresh coriander
Fresh coriander sprig for garnish
Method
1. Heat a nonstick pan. Add banyard millet and roast on medium heat for 4-5 minutes.
2. Add 2 cups water, cover and cook on high heat till water is absorbed.
3. Lower the heat and cook for 5 minutes.
4. Heat oil in a nonstick pan. Add peanuts and sauté till golden brown. Drain and set aside.
5. Add mustard seeds and once they begin to splutter, add cumin seeds, green chillies, curry leaves and mix well.
6. Add onions and mix well. Add salt, turmeric powder and mix well. Sauté on medium heat for 2-3 minutes.
7. Add sugar and mix. Add cooked banyard millet and mix.
8. Sprinkle 2 tbsps water, cover and cook for 2-3 minutes.
9. Squeeze lemon, add the peanuts, coriander and mix well.
10. Transfer into a serving bowl, garnish with coriander sprig and serve hot.

Millet has to be soaked 6-8hours prior to cooking any dish due to its high fibre content in order our body to digest and assimilate fully. The soaked water should never be thrown away as it is full of nutrients. Always buy unpolished millets. Sanjeev Kapoor ji should also educate the public about millets after thoroughly researching. 🙏🙏🙏

He is made it out of Samo, marathi word, varai tandul, usually used in Maharashtra on fast days, this does not need soaking, hope I got it right..

Kya poha barnyard millet ka hi ban sakta hai ya kisi bhi millet se banaya jaa sakta hai
Koi v millet se aap bana sakte but usko soak krna jaruri hai, minimum 8hrs otherwise wo digest ni hota, n of course high fibre low glycemic index.
