I'm Indian but never heard of Shinju.
I am excited to see a recipe from my country (Nepal). I wont regret saying "Nepalese run on WaiWai" :D. Every single Nepali person when they plan to move abroad (for longer stay) for studies or work, they pack their suitcase with at least 20-30 packets of WaiWai, lol. Thanks a lot Beryl, for including a Nepali recipe and sharing the history of WaiWai.
This episode brings back memory from 2019. It was the last day of college, 2 of our Manipuri classmates made singju but made it super spicy and the whole class enjoyed it. Fun times

Brings back memories of sunbathing in the lawns of Delhi University and eating super spicy Shinju made by my Manipuri friends during our breaks. ❤️ Even in winters, I always needed an ice-cream afterwards to manage the spiciness. While living in hostel, we used to make the chat version all the time as an evening snack. We would add cabbage to it and call it cheat Shinju as we could never find all the ingredients to make the original version. 😂

in Nepal when we say noodles it's usually these packed instant ones eaten uncooked or cooked...for others type we call them Chowmein or Thukpa...AND YEP'WAI WAI' RULES AT TOP...

(TPFF) in Thailand and by the Chaudhary Group in Nepal.The brand has been produced in Thailand since 1972 by Thai Preserved Food Factory Co., Ltd.The company's managing director since 1998 has been Pricha Napapruekchat, the eldest son of the founder.
In 1984, the Chaudhary Group, in collaboration with TPFF, introduced Wai Wai instant brown noodles in Nepal.

I love the idea of non-cooking recipes (which are not just salads), or dishes for eating cold, for really hot summer days :)
if u still have Philippine fish paste leftover, u can make "Bicol Express" with it.. u just saute pork slices with the shrimp paste then add coconut cream.. the coconut cream (or coconut milk) kinda neutralizes the paste if u don't like the strong flavor.
That sounds AMAZING!
Add lots of chilies as well. Bicol Express is also known for its spiciness 💕

Originally in singju we don’t use cucumber, everything else is sliced very thin and perilla seeds and gram flour are toasted and ground . The base flavour comes from fish paste mashed with boiled red dry chillies . The closest thing to ngari aka fish paste wud be shrimp paste. Besides that use many different herbs( except for mint). Soo happy to know our cuisine is preferred outside of state. Hope you keep trying more and I love your channel ❤️

I SCREAMED WHEN I SAW SINGJU🤣🤣🤣 SO HAPPY TO SEE MANIPURI FOOD HERE. ..btw fish pickle and fermented fish paste taste very different so the taste of that SINGJU must be a lil bit different from our usual SINGJU...I want you to try the og version but it would be difficult to get the ingredients I guess😅
Hi Beryl,
My name is Suhilla Kazem. I am an Afghan refugee living in the Unites States with my husband and son. The way we prepare ramen incorporates Afghan gastronomy. To the ramen we add ground beef, legumes (especially garbanzo beans), and most importantly yogurt.
First, in a frying pan, saute some chopped onion, after which add ginger and garlic paste. Once cooked, insert the ground beef. Once the beef has browned, stir in a little tomato sauce, adding any spices that you like, such as black pepper. Second, in a separate pot for the noodles, add just enough water so that the ramen will not need draining. Then, dump the dry ramen and flavoring packet into the water, thereafter adding the precooked ground beef, precooked beans, and some hot sauce.
In a separate bowl, add three to four heaping scoops of yogurt. Into this add minced garlic and a little salt. Mix them all up.
Finally, once the ramen is cooked, add it to your bowl. Make sure to stir it so that the yogurt sauce is well incorporated. Garnish with dry mint, black pepper, and optionally pepper flakes.
In a frying pan, quickly fry some minced garlic with two tablespoons of oil. As soon as you smell it, pour it over.

For the Filipino fish paste, what I do is to sauté it with garlic, chilli, brown sugar and banana ketchup to neutralize the fishiness. It will get this rich red color instead of the usual pink

@@cifa9713 Banana ketchup doesn't completely taste like bananas, you'll only get a hint. It's a sweet and thick ketchup that has a teeny bit spice from ground black pepper. Okay here, search Jufran Banana Ketchup so you'll have an idea. :)

I love these noodles. My friend, who is a Nepali used to bring wai-wai for us at School. The whole class used to love it, but they are not easily available in my place in India.

I can't believe you!! I have been watching your videos for over a year now and this episode had me awestrucked. Wai Wai singju/ Mimi singju is quite a popular food among Manipuris. A food story content should be this precise and reach every corner on the globe. Respect!!!!

If you'd like try more, I'd recommend trying:
-Axone (fermented beans typically used in chutneys and curry. It's so good i named my cat after it hehe)
-Bamboo shoot(usually added in meaty curry)
-King chilli (can add in said curry or make chutney. Northeast chutney is usually to be taken with with caution but it's packed with lovely flavours)
Indomie raw + seasonings, crush the noodle, shake it with the seasoning (dont use the oil). Raw and yummy. Want toppings? Add crushed potato chips/slices fried tempeh or more boncabe.

Hey Beryl, I have a new video idea! Since you have so many ingredients that you have problems using, I would be very interested in seeing how other people would use them 😁. So like a pantry challenge you know...you show people your pantry and they have to come up with recipes. I feel like different cultures would use the same ingredient in a very different way so you might be quite surprised to see what one can do with a fish sauce for example ☺️
Manipuri Mimi Singju, a must-go-to street snack. We people here in Manipur love to eat Mimi singju, like a LOT! I'm glad that you like it. Hope to see more north eastern food content on the way~
Hey Beryl! Thanks for featuring Wai Wai, our staple snack in Nepal, and its history. The first Chat dish you made, we call it 'Sadeko Wai Wai' (translation marinated/mixed Wai Wai) in Nepal. Ingredients and process, pretty similar. 🤤

I have tried so, so many instant noodles in my life, and Wai Wai has been my top favorite for a long time. I almost always have it as soup but some of the dry recipes I've tried were amazing. Happy to see a vid all about my favorite noodle!

okh so i am indian and i did my schooling from nepal nd wai wai was always our go to snack whenever we were stuck in traffic in bus from coming from nepal birgunj to india wai wai always helped us to satisfy our hunger nepal is like 15 min from my hometown raxaul india i actually went everyday to do my schooling from one country to other ie from india to nepal

That fish pickle, I am guessing is kerala style as I can see Malayalam written on it. It is definitely fermented like all the other pickles u get, it is sort of like kimchi, for comparison. But it isn’t a fermented paste like chunjang. So that must make a difference. Pickles are more like a side dish and not exactly an ingredient.

Lovely! Overjoyed to see singju being recognized n eaten across the oceans. I am sure you will love it with the rosted fermented fish. There are different ways to add fermented fish in food. When it comes to singju it's roasted first then smashed and mixed with the ingredients. There is no fishy smell in the food after adding fermented fish. I agree shrimp paste has s strong fishy smell though. Love from Manipur 👍
I have been a fan since the beginning and I'm really glad that you tried a dish from my home state Manipur. And you described the flavours well like how it has similarities with South East Asian flavours. We use fermented fish but the fermented fish pickle is also close to it. Looking forward to more videos.

In Australia we have an old-school party snack called Nuts & Bolts people often put dry noodles in. Nutrigrain cereal, peanuts, sultanas, and curry powder make up the base of it.
Singju is such a quintessential side dish of Manipuri's. A very much loved and revered; thank you Beryl for introducing it to a greater audience.

This is probably a very atypical use but my grandma used to make this salad that was like...broccoli and peanuts and some other things, but the thing I distinctly remember is that it had raw instant noodles broken up in it. It was super crunchy and so good! I'm gonna have to dig up that recipe again this summer.

I first had a ramen noodle salad at a potluck at work here in the states. The raw ramen basically took the place of croutons, and the salad also had almonds and lots of veggies. It was totally tasty.
