  • Mirror chocolate glaze for cake.
    This glaze is obtained super-shiny and glossy and is made from simple ingredients. The recipe is simple, most importantly, observe all proportion and preparation technology of the mirror glaze.
    Ingredients:
    Sugar 240 g
    80 g water
    80g cocoa powder
    160 g cream 33%
    Gelatin 14 g
    70 grams of water to soak gelatin
    Soak gelatin in the water. Sift cocoa powder. Mix sugar with water and boil until the syrup gets 103 C. Add the cocoa powder, mix together, cook for 2 minutes. Heat the cream to a boil and add the gelatin. Mix the syrup and cream together thoroughly and cook for one minute. Blend the glaze with hand blender, then cover with plastic wrap and let it rest in a fridge for 24 hours. Working temperature for a frozen cake is 30 C, for non-frozen one is about 20-25 C.
