I like pastries, but they are all too sweet for me and all that real sugar is NOT good....causes systemic inflammation and insulin resistance.....so why aren't they making pastries with 1/2 the real sugar? I would like the taste more?
omg same, my favourite dessert, snack definitely pastries but i don't like the way that they put too much sugar in them. so whenever i crave cake, pastries,... i try to make it at home, but the problem is i don't have so much free time (except quarantine 🙃). i just wish bakery would at least use 1/2 sugar in each items😞
ruby dang When i bake i reduces the sugar by 50%, sometimes down to a 1/3. I never bake american cakes bcs the use crasy amounts of sugar. Why not try it?

I consume enormous quantities of stevia to indulge my sweet tooth without the calories. My fav. brand is KAL (pure extract powder). Hopefully there aren't any serious side effects...
Never heard of that brand, I might have to try it out! So what kind of things do you use it in, coffee? I feel like everything has side effects, but unless you're dropping cyanide into your meals I think life is too short to worry about that kind of thing haha
Sadly I doubt you can get KAL in the UK; I can't get it in Canada (i have to order in the US then schlep it over the border). I use it in hot cocoa (10 calories, just use 1 scoop of baking cocoa and stevia), salad dressing, smoothies, homemade puddings (cottage cheese blended with various ingredients). Scary to think how much $ I've spent on stevia.

I tried to bake cupcakes and replaced the sugar with stevia but the cakes came out abit rubbery, doughy texture how can I fix this ? Maybe add baking powder perhaps as did not add any raising agent what do you think ? Thanks
I tried adding stevia (for baking) instead of sugar and it was NOT GOOD!!! Everything was wrong with it from the taste and the outside texture to the crumb inside. It was flat, dense and just plain inedible!! I threw it away in the trash. Might there be a happy medium - adding BOTH stevia AND sugar to see if that improves the final outcome?
I'm afraid I've never baked just with Stevia, Natvia is the only sweetener I've ever used and it's mostly xylitol based, so I'm definitely no expert in this area! No harm in trying a combination of the two I guess?
You used identical things and the results for no sugar is still very good! If u had little Apple sauce it would be better too and of course still healthy!
Natural sweetener is the best. If you want to eat healthy. I think people should think more on feeding their cells with natural ingredients not themselves.

Don't you think it is better to get an independent judge to taste, it's not I do not trust you, but you are the baker, you are not going to say, the stevia cake would be rejected by the Crows.

I make boiled fruit cake without any sugar or sweetener. The fruit has plenty of its own sweetness . In fact, it tastes better without sugar.
I am diabetic and use stevia (half the amount of sugar) and find it identical to the taste.
How do yo manage the volume of the cake? Does it changes that much or is it ok?

Honey is a good alternative to processed sugars imo.

Indian powdered sugar called khand and jaggery is best to use instead of ur daily sugar.

Hi there! It really depends brand-to-brand how the stevia reacts in the cake. Also yes, raising agents usually help!

i want to bake a cake without any sugar. Is it ok just butter, flour, milk eggs, baking powder ?
Junie Cheah the cake would not have any golden colour to it, different texture and probably taste very bad - so I wouldn’t recommend it!

I believe Natvia is also made with erythritol or another sugar-similar sweetener to pad out the stevia!

You didn't put baking powder and baking soda in your cake. How did it rise?
Sassy & Art I used self-raising flour! You can use plain flour and add 1 tsp of baking powder for the same effect.

Natvia is a blend of erythritol with stevia I believe, if that helps!
