- Expensive ham doesn't get more expensive than genuine Iberico ham. A leg of Iberico ham can cost as much as $1,500 a pop, is aged for three years and is the product of exclusively acorn-fed pigs. Carving Iberico ham is truly an art form and we challenged Molly Baz to learn how to do it, with the help of Jaume Guerra from Despaña (@despananyc).

It's the same way you would clean up and slice bone-in leg of prosciutto so it's still useful to learn. And regular prosciutto leg is nowhere near this price.
For 1500 you can fly to Spain and take a class. And cut a 50 buck leg of ham which is what most of the population here eats.
I mean if you buy a leg uncut you're gonna be doing this yourself a lot. I'm spanish and every once in a while there's a leg in our kitchen as a christmas present or something like that and it's pretty useful to know how to cut it. My father carves at it like the leg owes him money and it really shows
@@terryglidden9647 Well, you could find a very good Jamón de Bellota for 150-200 € here in Spain, and use the rest of the money to pay the fly and part of your vacations
I've been considering getting a (albeit much cheaper) leg of jamon. I would have purchased already, but I'm afraid I would butcher it. So this video is perfect!

If anyone wants to know the translation for each part:
-Maza: literally hammer. In this case, it refers to a big chunky part.
-Contramaza: counter-hammer. The opposite part of the maza.
-Punta: it means the tip, nothing more.
Also, when Jaume said "make sure to show the nice part of the ham", he meant to show the thick fatty side, don't hide the fat because it is the most important part of the ham.
LtdJorge That’s interesting! My first guess was that maza would mean mass, like just an amount of something. But it seems it’s more like “mace” which is a medieval weapon with a handle and a weighted end, a bit like a hammer as you say. Not something we use these days though 😆
@@Kefford666 I tell you, we use maza a lot when talking about tools. It's like a bulky and short hammer. Also, mass is masa, which is spelled very similar :)

Not that gabby needs my validation but she knew what she was talking about when they were trying to translate the word for the bone in the lower leg. She pointed to her own shin which did correlate with the picture.She just said femur instead of what I believe was the fibula. Femur is the thigh. Fibula and tibia are the lower leg. 🙌🏾 Gabby!

@ do you speak multiple languages 100% fluently all the time? no? :) all she did was mistranslate one word for a similar one. that doesn't mean she didn't know what she was talking about.
The only thing she didn't get properly was the English of the word, which is completely understandable. It's an anatomical term, and it's not her first language!

Spaniard here! Nailed the sandwich. Bread with rubbed garlic and tomato, ham and olive oil is how we do it. You don't need anything else really.

As someone who's part of a very Spanish family who on occasion travels to Spain to visit relatives, and who fortunately has gotten to experience their culture and cuisine, I can wholeheartedly say that Jamon Iberico is 100% worth the price. The flavor and texture of this meat is by far the best out of any and every piece of meat I've ever eaten. It is amazing, and I think everyone should experience it, and Spanish culture in general, at least once.

So I'm sure other people have commented this already, but in Spain a very common way to eat Jamon Iberico and Jamon Serrano (besides just by itself) is in a "bocadillo." It's literally just Jamon between two extraordinarily fresh (and sometimes toasted/grilled) pieces of baguette. It was a really popular in-between classes snack at my university in Salamanca and also a nice light meal when I was traveling. I know it sounds weird, but like Molly and the other BA chefs said, you really just want the Jamon to shine through, so a bocadillo is a really simple, (in Spain) inexpensive, and delicious way to enjoy it. I think she did a great job!!!!

I think how Molly chose to do the sandwich was the most brilliant thing she's ever done. Brad was right weighing in on the less is more. When you have such a prized piece, you don't want to put baby in the corner. You have to have the right amount of the right ingredients to give the star the chance to shine. She did a great job.

@@meteorrejector that's glass for the customers, thats just part of business. A lot of the time that kind of glassware will actually get washed in the bar instead, then brought back, and it gets stored in a specific place. Cooks aren't going to bring unnecessary glass around the food and set in all the nooks and crannies and open shelves they end up putting their drinks on.
