  • Corned beef and potato pie is really easy to make and it tastes delicious. I make corned beef and tomato pie with hot water pastry. Hot water pastry is one of the easiest pastries to make and work with. The Magic Knife is used in this video.

    I know what you mean about those tins. Only last week I opened one and cut my thumb on it, didn't realise until I found blood everywhere! Well where's there no sense, there's no feeling! Sorry for the long comment, I also love corned beef and potato pie

    when I was growing up, my father used to cook corned beef hash, which is how you cooked the corned beef filling. We used to eat it with fried eggs and toast.

    Since coming to live in the USA I realised my grandchildren would never experience the food I grew up knowing in the North East of England. So I embarked on a project of writing about the food I ate, including recipes and the places I knew. This gradually expanded into food, recipes and places I visited throughout my life. It stands as a 755 page multi volume piece of work. It’s title? “A JOURNEY FROM CORNED BEEF PIE”. Comfort food par excellence, or as you said, umami in a pie. I always chop the onions finer and add extra white pepper (white is a must). Otherwise, pretty much the same recipe. By the way, my American grandkids all love corned beef pie!

      Yorkshire has an amazing food heritage. I'm 58 but can remember awesome local dishes cooked by my grandmothers who were both excellent cooks. One of my grandmothers is actually originally German, so I got some German dishes as well.

    I genuinely believe that corned beef and potato pie is the best pie in Britain. It's just so moreish. Saying that, tinned corned beef is such a versatile ingredient and it amazes me how many people turn their nose up at it. Lovely stuff.

    Lovely video! Always fun to see the magic knife, and an extra treat on fancy slow-mo flour! Looks very yummy. I'd enjoy that with a generous spoonful of mustard pickles, or green tomato chow chow. Yum.

    Great video. I think I've zeroed in on my fear of making pies. I saw both my grandmothers faffing about with blind baking and the whole process taking like 5 million years. But your hot water pastry cooking is an absolute winner and even I would have the patience to try it. Also, did I mention I love pork pies and that method is essential for them?

    I like the look of that pie, Keef, and I'll have to have a go at it. (I don't do pastry really though) I used to get Corned Beef, Potato, Onion and Hard Boiled Egg pie with a big mug of tea in a little workmans Cafe about 55 years ago. Real Magic Grub.

    Keef did you ever eat a meat and potato pie from Johnson’s bakery on mill st ?
    I had a few from there as an old flame lived up that way towards dingle area.
    That pie hasn’t left my mind since watching this so you have inspired me to have a go 👍🏼

    Keith you can actually use a can opener for corn beef tins!! I started to, after I cut myself using the flimsy key!! 😻

    Mr. Keef, think about it if toy opened a can of corned beef with a tin opener, the meet would not be able to exit the can. there would be a beval on the edge cut. also, I'm assuming that is why the cans are that shape to allow easer release

    Looks like a better recipe than the one I used last time I tried this. Too much potato so I had to fill two pies, and the corned beef was diluted, for want of a better word, and that was two pies which were both rather bland. Easy to remember, I caught that right off, same weight of potato as of corned beef. Thanks very much Keef. And, hot water pastry too, ooh yum. 😊👍👍👍

      I think the corned beef adds just the right amount of fat too. That fat is basically Tallow, which makes it even better.

    Previously working in a meat production factory I came up with an idea to make gammon burgers with minced gammon. I never got round to perfecting it I’d be curious to see if you could make them a reality.

    Mr. Keef, Thanks for the shout-out! Here's a brief commercial: for the last too long, I've been having my coffee in what was once a Zabar's mug. (If the Mr. and Mrs. Keef Cooks duo ever hit New York City, to work out their contract for The Food Network, I hope they'll go there.) Anyway, The crummy Zabar's mug has faded away to nothing in the dishwasher. The KC mug, however, is glazed over the stunning likeness of Himself, and I am expecting great longevity from it. Meanwhile, I have a tin of Bully Beef, as they call it in the Islands, and your recipe is probably going to happen tomorrow. Re: the damn key thing, I keep remembering how coffee came in rather squat tins that had to be opened with a key, leaving a spiral instrument of danger. My brother and I used to play with them, and it's a wonder we didn't slash ourselves to ribbons.

    Fun fact- once cut my finger nearly to the bone trying to get a key from a corned beef tin after it had been opened. Got the can from the rubbish bin when I was like 7 or something 🤦‍♀️

    Hi Keef and everyone. I'm after finding where we can get really good quality Corned Beef, as versus that stuff in axle grease.
    Tesco "finest" Corned Beef used to be absolutely superb. But, sadly, they stopped selling it. It was a much less fatty product and more like what we might make at home.
    Does anyone know of a superior quality Corned Beef and where we can buy it, please? Alternatively, maybe homemade Corned Beef should be a future Keef Cooks project?

      Homemade corned beef was one of my earliest videos, back in 2015: ua-cam.com/video/3-hmRnurYGY/v-deo.html But I don't know how it would work in a pie - the texture's a lot firmer than the stuff out of a can...

      @@Keefcooks thank you👍. That's very close to the tradition corned beef I've eaten in the USA. (I'll definitely be giving that recipe a try.) But, as you say, it's probably not suitable for your pie or a Corned Beef Hash.
      I've just discovered that Princes do a "Lean" corned beef. I'll give that a try, otherwise the search goes on.
