I did exactly that on my 2018 Mustang Ecoboost. It cost $500 in parts and labor at Midas. The only difference is that I went with 4" dia. straight chrome spools and tips from where the weld cuts were on the deleted mufflers outwards. That made my exhaust sound a bit louder than the one shown here with the original tiny tips. Strictly from a sound perspective (in my opinion), the result is definitely better than the Full Race or Tomei catback exhausts.
