  • As spring comes in, we are always looking forward to more salads and lighter meals. We tend to want lighter food when we plan to be out in the heat more and more. It's not hot here yet, but we are doing the prep work for it. lol Enjoy!
    0:30 Thai Chicken Salad
    8:40 Taco Coleslaw
    14:38 Pepper and Cucumber Salad
    Thai Chicken Salad:
    Peanut dressing:
    5 TBSP peanut butter
    3 TBSP water
    2 TBSP soy sauce
    1 TBSP honey
    1 TBSP lime juice (1-2 small limes)
    1 tsp sesame oil
    1/4 tsp garlic powder
    1 tsp fresh minced ginger
    Salad mix:
    1 lb coleslaw mix
    3-4 green onions, sliced
    1 red bell pepper, diced
    1 cup chopped cilantro, basil, or mint
    3 cups cooked chicken
    1/2 tsp each, salt and pepper
    top with roasted peanuts or chow mein noodles
    Taco Coleslaw:
    1/2 cup sour cream
    1 cup mayo
    2 TBSP taco seasoning
    1 lime, juiced
    1 lb coleslaw mix
    1 bell pepper, diced
    1 can black beans, drained and rinsed
    1 can corn, drained
    1 can rotel, diced tomatoes and chiles
    1-2 jalapenos, diced
    1 cup cilantro, chopped
    Pepper and Cucumber Salad:
    3 large bell peppers, sliced
    2 large cucumbers, sliced
    1/4 cup asian sesame ginger dressing
    1 TBSP everything bagel seasoing
    2 TBSP ancho chili oil crunch
    Hi, welcome to our family channel. We are a household of 4 most days, with other children that come and go. We have many furry family members as well. We love to take on new learning adventures and opportunities.
    The COVID pandemic changed a lot about our lives. For me, Krista, as a hospice nurse it opened my eyes to so many adventures I was missing with my family. While I loved pouring into my patients and their families, in many ways it was taking away from my own family. I hope to one day be able to return to hospice/nursing work. Not only was it beneficial for us financially, it also enlivened my spirit on a different level. I felt empowered to empower my patients and their loved ones along their medical journey. I made bonds that will forever shape me as a person. We also had the need to move closer to Michael's mom who is not in the greatest of health.
    While at this time UA-cam was simply a hobby, and for the most part still is, it is a slight boost to be able to continue to stay home with my children and be near to family that needs us. It has also allowed me to volunteer a TON more than I have ever been able to do. The kids and I are more involved in leading in our church, helping our local food banks, helping neighbors, and participating in sooooo many 4-H learning opportunities.
    In 2023, Ellinor came to me asking to be homeschooled due to many struggles she was facing in school with learning disabilities as well as social relationships. Since I was in a position to do this, I jumped in. My youngest was given the choice to homeschool as well or public school that year. He chose to continue public school. This split decision has been a blessing and a curse. We have lost the flexibility that homeschool offers in our schedule due to one remaining in public school while it has also allowed me more one on one time with Ellinor to help rebuild her spirit. To make this possible, I did have to leave my part time job and unfortunately have not supplemented that income yet, but God has kept us moving forward and that's all we can really ask for. For the 2024 school year, both of my younger two children will be homeschooled. I feel more at ease, but still highly anxious as we tackle this endeavor.
    While I do hope that our channel continues to grow, I hope above that, the content we provide is reflective of our lives. This is just our EVERYDAY TEXAS LIFE and the glorious adventures that lie ahead for us! Yes, we live a much humbler life than we did 5 years ago, but we still manage to do very well in my eyes. Remember, life doesn't have to be perfect to be beautiful!

    Spinach Artichoke Pasta Recipe:
    16 oz pasta
    3 cups heavy cream
    1/2 stick of butter
    1 heaping TBSP minced garlic
    generous sprinkling of pepper
    5 oz shredded Romano
    3-6 oz shredded parmesan cheese
    5 oz container of fresh spinach
    1 can artichoke hearts, drained
    tyson grilled chicken strips, optional
