How To Make Bacon & Cheese Yakimeshi (Swiss-Japanese Fried Rice) - Recipe

  • Yakimeshi (fried rice) is a staple in Japan and you’ll find it in many restaurants. Usually, it’s fried up with some onions, vegetables, and scrambled egg. In this recipe, a Swiss influence is added with bacon and two Swiss cheeses.
    INGREDIENTS
    1 tbsp olive oil
    1/2 onion, finely chopped
    7 oz (200g) bacon block, chopped 1/4” (5mm)
    6-7 shiitake mushrooms, sliced 1/4” (5mm) and halved
    3 cups cooked rice
    1 green onion, chopped
    2 eggs
    6 oz (170g) Emmental cheese, grated
    4 oz (110g) Gruyere cheese, grated
    DIRECTIONS
    1. In a large frying pan, heat the olive oil over medium heat. Add the onion and bacon, and cook, stirring occasionally, for 8-10 minutes
    2. Add the shiitake mushrooms and cook, stirring occasionally, for 5-6 minutes.
    3. Add the rice and green onion. Chop rice to combine well with other ingredients. Cook and chop for 2-3 minutes.
    4. In a bowl, beat the eggs. Pour over the rice mixture and stir in until the eggs are slightly cooked.
    5. Combine the two cheeses and add to the fried rice. Stir in, on the heat, until the cheeses start to melt.
    Note: Letting the cheeses get a little browned and crispy around the edge of the fried rice adds some great flavour.

    Gruyere is one of my fave cheeses and love the shiitake mushrooms too. A stick to your ribs meal! 👍😋

      Gruyere has great flavour. Unfortunately, very expensive in Japan.

    Nice Yakimeshi Kevin. I like the additions of the green onions too. I think I am going to become a cheese-monger and open a fromagerie right next to Kuma's Kitchen.
