I go spearfishing for eel all the time. One thing you should know is that their skin is very strong, and hard to pierce; I can only imagine this man's knife is razor sharp.

Living in an island named camiguin in the county of Philippines. This actually tastes good.
We cook it with the coconut milk and other spices with extra spicy flavour.

I can’t believe the number of comments regarding the chef’s ‘unsharpened’ knife!?! The Moray is one of the strongest beasts in the ocean! Not only are the bones thick, they are also SHARP! He is taking care in dissecting this creature. There is NOTHING WRONG with his knife...I can GUARANTEE YOU that!!
Run along...and let the adults do their work, would you??

Amazing skill! You can tell that Moray Eel is one bad Eel. The skin is beautiful and tough. I would make a pair of shoes or a purse with that skin. Looks like about a $200 meal

Corey Woodley you can't get it fresh where I live. For that matter, you can't get any seafood fresh here. Let alone having it prepared with this kind of mastery.
