I would guess something like the vinegar pulling fat from the meat, and the meat absorbing the water from the vinegar causing some type of seperation with the vinegar on the top half and the fatty substance on the bottom
I think the higher fat content is up at the top, the vinegar most likely destroyed the fat molecules, making space in between the grain of meat and the exposed areas and since it's at the top of the jar where gas is collecting. Most likely aged the meat in some way? While the other pieces towards the bottom have little to no fat content so they then are preserved? idk that's my best guess.
I think it had more to do with that he put the meat in first and it was compressed enough at the bottom of the jar that the vinegar just got to the top pieces, but didn't get to the bottom ones. If it would have been mixed or had less meat in it then all the pieces would have been the same.

When preserving anything it’s necessary to remove all of the air from the container you are preserving in. Otherwise you will get bacteria and have spoilage with anything that comes in contact with the air. The spoilage will spread over time. The fact that you had the meat in vinegar decreased the time of spoilage. There’s a whole process to caning food.
With regards to the pickles - pickled cucumbers need more than just vinegar - the process is about right, it actually takes less time than 30 days to make them (on average, actually only about a week), but you need to shake them every day, and add salt and sugar (plus whatever extra herbs and spices you want to give a bit of extra flavour).
That would be dangerous and/or expensive. Can't keep liquid nitrogen in an enclosed container, would evaporate and cause a high pressure hazard. It would be expensive because he would constantly have to refill the nitrogen

The duck egg is a red jelly when preserved, the yolk is a dark yellow. When the eggs were in vinegar it changed the molecular structure of the internal of the egg to a brownish color. The egss also smell horrible as is with out the vinegar. I had a coworker bring some to work, I ate one before I worked with them. It's an aquired taste.
Okay so tip from an actual chef (me) the reason that the meat that was on top is brown is from oxidization where the lid was still cracked. The meat on the bottom is still pink because the vinegar prevented air from reaching it. You’ll notice if you put a raw steak or something back in the fridge and part of it came uncovered and you were too lazy to pull the cover back over.. the part that was exposed in the fridge becomes brown and sort of hard even overnight.
If you leave galvanised metal in vinegar. The vinegar will strip the galvanise coating. The paintballs are biodegradable and they will do the same thing in water. Great video buddy.
