I have the same cookbook. Bought it in a thrift store in Lafayette, Colorado for $2. The two boys running the store were going to have a barbecue and didn't know how to cook, so I took out the meat, poultry, and fish sections and gave them to the boys. I brought the cookbook with me when I moved overseas, and have it opened to this recipe. I'll make it soon.

I have never heard of this... great recepie ..will do this for breakfast tomorrow and use a carrot-as you suggested-since I gave all ingredients in the house except chicken and we have a problem with the roads to the shops due to the weather. this morning I had my last Granola-portion( your receoie) for breakfast I had it with greek yoghurt. absolutely yummie.... Thanks for all the -so-very-different-ingenious-suggestions. ....
I remember more of a brown meaty gravy in my neck of the woods. When a Chinese restaurant opened in my neighborhood during my childhood it was one of my fondest memories. Beautiful large dining room and egg foo young was my favorite! Alas, haven't tried to veganize it but there must be a way. Yours looks delicious as always, Kevin. Thank you ❤️

Yes to the fried rice, as authentic as you can do. I visited Okinawa a couple times and their fried rice in any dive was so delicious and different than in American version. They used a long word spice that began with “Nag………..) hard to find. Just can’t seem to replicate that flavor.

Fried rice is not a difficult dish to make. Just use rice that has already been steam cooked and cooled. Add into frying pan with just enough oil to keep it from sticking and fry it...adding whatever you want to it, although they are adding a lot more to it now than they did it in the 1960s and earlier.

This may be a silly question, but it looks to me as if you've used a non-stick pan. I've been resisting purchasing a non-stick pan for fear the "chemicals" in the coating would leach out into the food. Would this work in a regular pan? I'm guessing it would since it's basically a deep fry rather than a pan fry, given how deep the oil is. I guess i'll just have to try it! Thanks again for all you do to brighten and nourish the world ...
Hmm...Every Egg Foo Yong that I have ever eaten, both in the South and the North in the U.S. was covered with a gravy...usually one that matched the meat used in the mixture. It's a great comfort food....but I've had Egg Foo Yong for decades and it has never been served with sweet and sour sauce... Sweet and Sour sauce is typically served with egg rolls or batter-fried things like shrimp etc. I was very much alive in the 60's, and we frequently went to one of the many Chinese/Oriental restaurants in our town....Egg Foo Yong was never served with Sweet and Sour....(I've had it out on the West Coast as well....always with a gravy. ) Never have had it in NY whenever I've been there (which hasn't been for a while.... so I can't speak for the North-East Coast, but HAVE had it in Florida when we stayed at our condo down there....and yep....served with a very delicious gravy....not a S & S sauce. LOL...apparently Betty Crocker has taken her own "version" of it as THE version.

Because the patties were fried in 350°F oil, they were not greasy. I did not drain them before plating.
