Kevin I just love your "vintage" recipes!! This one checks all the boxes for me😊 I have to avoid seeds as much as possible, so I will get some whole canned chilies and finely chop them. I made this casserole today. It is absolutely delicious, easy & will be one of my favorite breakfast, brunch, lunch & dinner dish. I made it for my family for lunch. I made it at 09:00 & baked it at 11:00 & ate it at noon. Thank you Mr. KLJ! How blessed your Mom was that you loved to cook at a young age for your family too.

I made this with veggie sausage, your layered potato thing, Brussels sprout and apple salad and blueberry coffee cake for my grad school mentor and his wife. They raved and raved and raved. I used take and bake dinner rolls on top instead of croutons. Cut them in quarters. So good!

Oh my goodness...Temptations are so expensive. I have two feline ladies, Olympia & Opal. I've started giving them dry Fancy Feast as treats. A 3-lb bag will last almost a month and cost about the same as 1 mega container of Temptations(which might last 8 or 9 days). They get a tablespoon of faux Temptations several times a day and as a bedtime snack(my bedtime that is.) I look forward to trying your casserole recipe but i may go half zucchini & half yellow summer squash. Love your videos and your elegant style. ❤Melody
This brings back memories. The zucchini began overtaking the garden. Mom would say, "Go out there and listen. You can HEAR them growing!" Lol. "Whatever will we do with all this zucchini?" We ate everything from casseroles like this to zucchini "crabmeat." Yes. Zucchini can become seafood. In the meantime, beg neighbors to take some more from the garden.
