Very many students want online-class-because being tested positiv-the rules over here are strict-. So I have an even more intensiv contact with my students...and give them advice about not only steps and breathing-but life-style too-because only a healthy body can perform. Hi, Kevin - that egg white/cornstarch/rice vinegar technique is called "velveting". I use it on some pork dishes as well for maximum tenderness. Addie in FL

I follow the USDA's guidance for freezing egg yolks: Mix 4 yolks with a pinch (1/8 teaspoon) of salt and 1 1/2 teaspoons of sugar or corn syrup. The salt and sugar (or corn syrup) will stabilize the yolks so they don't turn thick and weird as they freeze. You can freeze yolks in just about any air-tight container for up to 1 year.
i want to make this, but don't have a thermometer like this, so i have to wait and get one before i try it. Also, is there something else that i can use instead of Sesame Oil? i don't like the taste of it.
Kevin you should serve that in a plate not in bowl 😮 it isn’t a soup ! Plate will show your food better ( I know the Japanese eat mostly in a bowl but this food looks better in a plate )
