Good morning, Kevin. I made this recipe this weekend for my visiting niece and her family. It was fantastic! I mistakenly defrosted four packages of chicken tenderloins instead of breasts. I decided to be adventurous. I lined a 9 x 13 casserole with one layer of chicken, brushed on oil from the sun dried tomatoes, sprinkled with your seasonings, spread the filling as a second layer and added another layer of chicken, oil and seasonings. It baked about ten minutes longer than your recipe, as it was a doubled recipe. Using the outline of the tenderloins as a guide, I was able to cut servings resembling a lasagna. It was so delicious that my great-nephew had some for breakfast the next morning. Kevin, my hubby and I watch your videos together and are enthralled with the scenery, music and delicious recipes that you share. We have purchased the blue gloves for polishing my silver and the beautiful wooden tray for serving dessert to our dinner guests. We both appreciate your calm nature and elegance. Know that you are present as we enjoy our morning breakfast. ❤

Years ago I used to work in a kitchen store, where the owner catered, taught cooking classes, had cooks/chefs in to teach, sold wonderful teas and coffees and had cooking supplies and cheeses. I loved that store, and it smelled of coffee when you first went inside. Anyway, I got two recipes from there, involving stuffed chicken breasts, that I have since lost in a move, that involved stuffed chicken breasts and spinach. I believe one stuffing had spinach, ricotta cheese and Swiss cheese with the spinach. Then there was another that was duxelles and Swiss cheese inside a chicken breast. One was wrapped in phyllo dough and had phyllo dough “bows” on top, with strands of phyllo to wrap around the phyllo wrapped “package”, the chicken, so your stuffed chicken looked like a wrapped present. They were so cute. The other one was wrapped in puff pastry, with cute cutouts of dough, and had a beautiful sauce. These were very elegant looking when served, and at least that one had a sauce, and I am not sure about the other one. It has been so long, I can’t remember. Your chicken tonight reminded me of those chicken dishes and the memories I had serving them to my company. I wish you had come to my parties! Also, you need a good wine to go with these beautiful chicken dishes. Good memories. Anyway, I know your stuffed chicken dish is WONDERFUL. A little wine sauce would also be great over the chicken. Oh, so good. I will make these for my son and his wife, who will love them. Thank you for the recipe. I loved watching you make it.

Making My Mom Christmas Dinner this year, I will be using this recipe as the main course along with your Cabbage casserole recipe, we both love cabbage & she's never tried this casserole before so she can when I make it. I wasn't sure what I was going to do for the chicken until I saw this recipe. I am now happy that I have all I need to present to her a wonderful Christmas dinner which is different than what we are use to & we both don't want turkey this year. The recepies are wonderful,you explain so well and in detail,that one completely can follow....and thrn you also present it so calmly and friendly. with a bit of humor...so it is also very entertaining.. And THEN you present an elegant /cosy setting in your exquiste home. For my ballett-students that want to become a proffessional dancer,I also coach theory ( muscles/theater-stories AND healthy food-to keep them fit and strong)and I have allready told them about your channel..... Since dancers-like any athlete have to ear carbohydrates BEFORE training-for energy and protein AFTER for muscle developement...we find a many such recepies amongst yours... If ever you have a meat- recepie( protein) that contains: preperation and then oven.. and nothing more-exept heating up after performance. ..which I could name to the students as "ballett-dish"... which of your many would you recommend as the easist( because if all the training and point-shoe-sowing and sour legs-they must have an easy time... Could you use mozzarella cheese as I have a big bag of shredded to use up? Thank you. Made the pork tenderloin, potatoes and string bean sheet pan dinner. Looked beautiful and tasted wonderful. I added garlic powder. Family loved it!!!
Kevin, I am drooling watching you prepare this receipe!! It looks sooo good. I plan to make it sometime soon but will leave out the onion powder because I can't stand to eat or even smell anything with onions, ,leeks, chives or shallots. Even small amounts is awful for me. I love garlic though.
I just made this. It is fabulous. And it’s easy. And it lends itself to substitutions such as pepper jack cheese, or maybe broccoli. I had leftover basmati rice I used as a side and smothered it with the gravy, marvelous!

I made this for dinner tonight. Just a couple of minor changes in seasonings on my part but fantastic. The chicken cooked perfectly and was moist all the way through. Yum.
Made this for a dinner party and it was a hit! So easy to prepare it ahead of time and then just pop in the oven. Guests were so impressed and it was very easy to make! Thank you for such a great recipe and easy to follow along with you on the video!
It looks really good. In the UK beetroot is mostly served dressed with vinegar but it is also served hot with covering of bechamel. My inclination would be to do this with the addition of garlic (just a little) and fresh chopped tarragon.
In the UK hot beetroot is often served with a well flavoured bechamel sauce. In this case, I would be inclined to add a generous amount of chopped fresh tarragon with a quick dash of tarragon vinegar. This could be a substitute for the chicken gravy or you can, of course, have both. The chicken parcels looked lovely!

Fantastic recipe should be a great one to make for family dinners marvellous beets the only thing I would say is spinach whether fresh or frozen doesn't have enough ooomph I prefer Silverbeet flavoured with feta it can have garlic in the gravy but some how I think it might obe a bit heavy your time wasn't wasted as I will cook this one cold snap shivering day

I would have also added crumbled cooked bacon to the filling for the chicken. It would compliment the sun-dried tomatoes and cheese, beautifully!
