What many people don’t realize is that sugar was rationed during the First World War, so Turkish Delight truly was a rare treat to have at the time.

I was thinking the exact same thing- that during the war the odds of having anything with more than even a very small amount of sugar was very low.
That’s why so many recipes from back then call for raisins, or other dried fruits, to substitute sugar.

My dad loves turkish delight and always has it for christmas. I love it too as it was a special treat, its odd for todays sweeties and candies, but....historically it would have been super exciting for kids! Sweeties were pretty standard in texture so nougat and turkish delight were an exciting and exotic variation on typical boiled hard candy or jellys.

As a Turk, I can say the original turkish delight is rose flavored that's why it's pink. It was done hundreds of years ago by crushing rose petals to use the juice in flavoring this dessert as well as many other things in our cuisine. Never heard of vanilla or orange flavored ones. Also we don't eat it frequently. Usually we eat it during special days and holidays during which we have big family gatherings or guests so we usually serve it in a small cup along with turkish coffee to our guests. If the coffee does not involve sugar in it (some people want sugar some don't), then you can eat it while drinking the coffee which balances the taste. Otherwise the dessert itself can be very sugary, at least for me.

I remember this mentioned in The Lion, The Witch, and The Wardrobe (the first book in the series). I eventually realised that it's what we Greeks call "loukoumi" or "loukoumia" (plural). It's a popular dessert in Greece and in Greek culture as well, although it's much more popular in Turkey, plus much of the "loukoumia" sold in Greek stores outside Greece is actually manufactured in (and imported from) Turkey. Greeks metaphorically refer to any really savoury dish as "loukoumi". WARNING: Turkish Delight is INSANELY sweet and EXTREMELY dangerous to eat if you're diabetic (except in tiny quantities if your diabetes is well controlled). This is NOT a "health food". It pretty much tastes like sugar in gel form with various flavours added in.

The rose traditionally adds the flavor instead of lemon. You can make the lemon kind, but in Turkey rose was a flavor

It’s a delicious treat . When we were active duty in the Air Force our family was stationed in Turkey and we got to try some of this kinda soft red candy called Turkish Delight while we were there . We were there for a two year tour but we wish it had been a four year one because we all loved being there. It’s so beautiful there and it was like stepping back in time. The people were so gracious and friendly. Unfortunately it’s not that way anymore as that was many years ago when we were there in Turkey. I’m grateful that we got to have the experience of seeing and living in that country before things changed and I believe that that base is now closed down. I always wanted to go back again for another tour but unfortunately we were not able to but we got to go for one tour and I’m grateful and happy that at least we got to go and live there with our family and experience the things we did while we were there. Our children still talk about that special delightful candy that they got to eat while we were there! Blessings 💕
