This is a perfectly execute recipe for donuts. Everyone should take note that the lemon is added to the pastry cream at the end so it doesn't begin to cook the egg yolks. So easy to pull out the lemon and making a chocolate or vanilla pastry cream as well. Add sugar, salt, and yeast to a bowl containing bread flour and cake flour and mix. 2. Mix milk (about lukewarm) and eggs, then add lemon zest and knead by hand for about 7 to 8 minutes. (If you have a kneader, use it) 3. Add room temperature butter and knead for about 10 minutes to make a smooth dough. 4. Put it in a bowl, cover with plastic wrap, and ferment for about 1 hour until the dough has doubled in size. Lemon Custard Cream 5. Add sugar and vanilla bean paste to egg yolk and mix evenly. 6. Add cornstarch and mix evenly, then add lemon juice and lemon zest and mix. 7. Add warm milk, mix, and heat over low heat to boil. 8. Continue stirring and when large bubbles appear, boil a little more and remove from heat. 9. Add butter, melt, mix evenly and pass through a sieve. 10. Cover the top with plastic wrap making sure the plastic is touching the custard to prevent air from reaching it and cool it in the refrigerator. 11. Take out the fermented dough, press it to remove gas, and divide it into 12 pieces. 12. Shape into a round shape, cover with plastic wrap, and ferment for about 15 minutes. 13. Remove the gas from the dough, shape it into a round shape, place it on cut parchment paper, and cover it with plastic wrap. 14. Ferment the dough until it doubles in size (about 40 minutes) and fry it in oil at about 180ºC. 15. To make it nicely fried, flip it over only once for about 1 minute on each side. 16. When the doughnuts cool down, sprinkle them with sugar. 17. Stir the lemon custard cream with a hand whisk until smooth and transfer it to a piping bag. 18. Fill the doughnuts with cream. Personal notes: 1. and 2. Dissolve Sugar, yeast, and salt all in the milk, eggs and zest first before adding the flours (if using a machine you could chuck it all in together - doesn't really matter). I tried making this but the dough didnt rise so i thought my milk wasnt warm enough so i made it again and kneaded it even more but it still didnt rise anyone know what i did wrong
My answer is late but it may help for people looking for the answer, if the dough didn't rise, the milk was probably too warm, so it just killed the yeast ! The milk should be at room temperature, maybe a little more but it should feel lukewarm when you put a finger in it

16. When the doughnuts cool down, sprinkle them with sugar.
17. Stir the lemon custard cream with a hand whisk until smooth and transfer it to a piping bag.

빵 반죽에 넣는 레몬 제스트는 생략하시고 크림을 초코 커스터드로 만드시면 될 것 같아요~
