Just made these! They turned out so good, the only thing I changed was adding an extra tsp of vanilla which helped strengthen the flavor (but of course, each to their own. I just tend to like the custard to have more vanilla flavor.) Thank you for posting this recipe! ^^
I just made these doughnuts today, and I highly recommend anyone to try them out! They take time to make, and although deep frying may be scary, it’s worth it! The doughnuts are soft and pillowy and the vanilla pastry cream is luscious and creamy without being too sweet! It’s even more intense in flavor if you use vanilla bean pods or vanilla bean paste! You can even coat it in powdered milk if you like instead of just sugar.
@@katbaby hmmm. I think you use cassava starch or tapioca starch as a thickening agent. My fear with all purpose flour is that it may make the pastry cream have a starchy and not smooth texture.
I made this yesterday and it tasted really good :) some notes?: - the filling is really easy to make but makes too much, i still had 1/3 leftover - i heated up the milk for the dough to 40 ish degrees so the yeast mixed easier - 300g of flour was enough for me - i had to wait 50 minutes for my round dough to rise close to his - i cut my butter really small to mix easier - i put my round dough on squares of parchment like in his churro video so i won't squish the dough when i put it in the oil hope this helped someone. the donuts were really soft and weren't too sweet like other store bought donuts. :)

I just made these, the 20 min kneeding almost amputated my arm, but the result was amazing, though my only complain was that the custard was rlly nice before it got cold, but it solidified a whole lot it was basically jelly, i had to sift it and then add milk and reheat it on the stove, 45 grams of cornstarch is way too much! But the dough is amazing! I'll definitely make it my go to doughnut recipe Edit: i just realized he said 25 grams of cornstarch and not 45 im a literal knob

I know this video is like, a year old, but I just made an entire recipe and I didn't want it to go to waste. For some context, I'm from the U.S. so I converted some of the measurements. They may not be entirely accurate, so I apologize for any mistakes I may make. Now lets get onto the recipe! (this is the one from the video btw-) ________ Ingredients - Custard: 3 Egg Yolks 45g of Sugar (3 1/2 tbs.) 25g of Cornstarch (1 3/4 tbs.) 350mL Milk (1 1/2 cup) 50g Whipping Cream/Milk (3 tbs.) 1 tsp. of Vanilla Extract Dough: 160mL Milk (3/4 cup) 50g Sugar (4 tbs.) 5g. Instant Dry Yeast (1 tsp.) 1/2 tsp. Salt 350g Bread Flour (2 3/4 cup) 1 Egg 40g Unsalted Butter (1 and a little less than half oz.) ______ Instructions - Custard: 1. Separate 3 egg yolks 2. Add 3 1/2 tbs. sugar to the egg yolks, and mix gently until combined. 3. Add 1 3/4 tbs. cornstarch to your egg yolks and sugar mixture, mix well, and set aside. 4. Pour 1 1/2 cups of milk and 3 tbs. whipping cream into a pot/pan 5. Put the pot/pan onto low heat until the milk mixture is "hot enough" (bubbly near the edges+steam but not boiling. or to about 85.C/185.F) 6. GENTLY AND SLOWLY pour the milk into the egg yolk mixture while stirring so the eggs don't cook. 7. Mix well, then pour back into pot/pan. Add the 1 tsp. of vanilla extract and mix until combined. 8. After the mixture has cooled, put into a pastry bag and throw it in the fridge while you make the rest of the dish. Dough: 1. Pour 3/4 cup of milk , 4 tbs. of sugar, 1 tbs. of yeast, and 1/2 tsp of salt into a bowl and mix well. (mix carefully, and make sure your ingredients dissolve.) 2. Add 2 3/4 cup of bread flour and 1 egg into the batter and mix gently together so the flour can absorb the liquid. 3. After your batter has formed a some-what dough, knead for 2 minutes to make it... more dough-like. 4. After your dough looks like... dough, add 1 oz. of butter and continue kneading until combined. 5. Take dough out of the bowl and knead for 15-20 minutes. 6. After kneading, put it back in the bowl and cover with plastic wrap/food wrapper. Let it sit for about an hour, or until it has doubled in size. 7. After the dough has risen, knead for around 2 minutes to get rid of any air bubbles. 8. Sprinkle some flour on your surface/countertop and roll the dough (like, with a rolling pin.) to desired thickness. or to about an inch thick. 9. Cut your dough into circles using a circle cutter. You can also use a cup/bowl for this part. 10. Place dough circles into a pan, (a plate would probably work just as well.) and cover with a damp towel for about 30 minutes. 11. Fill a pot/pan with cooking oil (a little under half way up the pot/pan) and put on med. high heat. Heat oil until it's slightly bubbly, but once again, not boiling. 12. Drop the dough into the oil and wait until the underside is brown. Flip, then wait for about 30 seconds for the other side to brown as well. (these cook fast, so be careful.) 13. When your dough circles have finished cooking, take out of the oil (turn off the oil btw.) and then place on a plate of some kind for the oil to come off, as well as letting them cool down. 14. (OPTIONAL) Coat with sugar. 15. Make a hole in your pastries, (a straw would work fine for this.) and pump in desired amount of custard. ________ Thanks for reading! This took forever to type out, so really, thank you! I may have gotten some measurements wrong, and I am very sorry about that qwq. I did this today and it was SO GOOD! Here's some tgings I did: 1. If you have a sweet tooth like me! Definitely add more sugar! I wish I added more sugar honestly! Add some flavor powder or stuff if you want it to have more taste because for my strong and sweety taste it was bland. But that's my fault I should have adjusted it but I was scared to cause it might damage the donut but DON'T make the same mistake I did! 2. I slightly left the butter in room temperature si that it will be easier to mix with the dough! 3. IMPORTANT! Check your yeast if it is active! If not it won't rise! (How to check: put 1/2 WARM water in a cup and 1 tbs of sugar and 2 tbs of yeast! Leave it for 10 minutes and if bubbles form of foamyness then it's active if not! Definitely change your yeast!😊) 4. When you knead the dough just keep kneading even if it's a little soggy it will form eventually! But if it's SUPER SOGGY then while kneeding sprinkle some flour but not too much! 5. Placed it on some wax paper like what he did in his churro video REALLY WORKS WONDERS!😂 6.When putting the filling I think it's better to get your piping nozzle or stick and wiggle it around to put more space in the middle to put the custard! THAT'S IT! GOOD LUCK! I HOPE THIS HELPED!😱😭😍💖

Tried this recipe for the first time. My brother wanted some donuts and I’ve been waiting to try this recipe out. I used tapioca starch for the custard and all-purpose flour. The custard turned out less thick than the Nino’s but still very good. It became thicker when cooled down. My dough was stickier with 350g all-purpose flour so I added some more until it became the same consistency in the video. I got 25-ish small donuts. After frying, the donuts had huge pockets of air where I could put the filling in. I had enough custard for all of them. The donuts are soft but not Krispy Kreme soft. Overall, very good recipe! Really recommend! xx

The doughnuts were great but my Custard was a bit bitter, I think it was bcuz of the corn starch. I used cornflour in my recipe though

I just made these, the 20 min kneeding almost amputated my arm, but the result was amazing, though my only complain was that the custard was rlly nice before it got cold, but it solidified a whole lot it was basically jelly, i had to sift it and then add milk and reheat it on the stove, 45 grams of cornstarch is way too much! But the dough is amazing! I'll definitely make it my go to doughnut recipe

I know this video is like, a year old, but I just made an entire recipe and I didn't want it to go to waste. For some context, I'm from the U.S. so I converted some of the measurements. They may not be entirely accurate, so I apologize for any mistakes I may make. Now lets get onto the recipe! (this is the one from the video btw-)

Ingredients -
Custard:
3 Egg Yolks
45g of Sugar (3 1/2 tbs.)
25g of Cornstarch (1 3/4 tbs.)
350mL Milk (1 1/2 cup)
50g Whipping Cream/Milk (3 tbs.)
1 tsp. of Vanilla Extract
Dough:
160mL Milk (3/4 cup)
50g Sugar (4 tbs.)
5g. Instant Dry Yeast (1 tsp.)
1/2 tsp. Salt
350g Bread Flour (2 3/4 cup)
1 Egg
40g Unsalted Butter (1 and a little less than half oz.)
______
Instructions -
Custard:
1. Separate 3 egg yolks
2. Add 3 1/2 tbs. sugar to the egg yolks, and mix gently until combined.
3. Add 1 3/4 tbs. cornstarch to your egg yolks and sugar mixture, mix well, and set aside.
4. Pour 1 1/2 cups of milk and 3 tbs. whipping cream into a pot/pan
5. Put the pot/pan onto low heat until the milk mixture is "hot enough" (bubbly near the edges+steam but not boiling. or to about 85.C/185.F)
6. GENTLY AND SLOWLY pour the milk into the egg yolk mixture while stirring so the eggs don't cook.
7. Mix well, then pour back into pot/pan. Add the 1 tsp. of vanilla extract and mix until combined.
8. After the mixture has cooled, put into a pastry bag and throw it in the fridge while you make the rest of the dish.
Dough:
1. Pour 3/4 cup of milk , 4 tbs. of sugar, 1 tbs. of yeast, and 1/2 tsp of salt into a bowl and mix well. (mix carefully, and make sure your ingredients dissolve.)
2. Add 2 3/4 cup of bread flour and 1 egg into the batter and mix gently together so the flour can absorb the liquid.
3. After your batter has formed a some-what dough, knead for 2 minutes to make it... more dough-like.
4. After your dough looks like... dough, add 1 oz. of butter and continue kneading until combined.
5. Take dough out of the bowl and knead for 15-20 minutes.
6. After kneading, put it back in the bowl and cover with plastic wrap/food wrapper. Let it sit for about an hour, or until it has doubled in size.
7. After the dough has risen, knead for around 2 minutes to get rid of any air bubbles.
8. Sprinkle some flour on your surface/countertop and roll the dough (like, with a rolling pin.) to desired thickness. or to about an inch thick.
9. Cut your dough into circles using a circle cutter. You can also use a cup/bowl for this part.
10. Place dough circles into a pan, (a plate would probably work just as well.) and cover with a damp towel for about 30 minutes.
11. Fill a pot/pan with cooking oil (a little under half way up the pot/pan) and put on med. high heat. Heat oil until it's slightly bubbly, but once again, not boiling.
12. Drop the dough into the oil and wait until the underside is brown. Flip, then wait for about 30 seconds for the other side to brown as well. (these cook fast, so be careful.)
13. When your dough circles have finished cooking, take out of the oil (turn off the oil btw.) and then place on a plate of some kind for the oil to come off, as well as letting them cool down.
14. (OPTIONAL) Coat with sugar.
15. Make a hole in your pastries, (a straw would work fine for this.) and pump in desired amount of custard.

I did this today and it was SO GOOD! Here's some tgings I did:
1. If you have a sweet tooth like me! Definitely add more sugar! I wish I added more sugar honestly! Add some flavor powder or stuff if you want it to have more taste because for my strong and sweety taste it was bland. But that's my fault I should have adjusted it but I was scared to cause it might damage the donut but DON'T make the same mistake I did!
2. I slightly left the butter in room temperature si that it will be easier to mix with the dough!
3. IMPORTANT! Check your yeast if it is active! If not it won't rise! (How to check: put 1/2 WARM water in a cup and 1 tbs of sugar and 2 tbs of yeast! Leave it for 10 minutes and if bubbles form of foamyness then it's active if not! Definitely change your yeast!😊)
4. When you knead the dough just keep kneading even if it's a little soggy it will form eventually! But if it's SUPER SOGGY then while kneeding sprinkle some flour but not too much!
5. Placed it on some wax paper like what he did in his churro video REALLY WORKS WONDERS!😂
6.When putting the filling I think it's better to get your piping nozzle or stick and wiggle it around to put more space in the middle to put the custard!

Tried this recipe for the first time. My brother wanted some donuts and I’ve been waiting to try this recipe out.
I used tapioca starch for the custard and all-purpose flour. The custard turned out less thick than the Nino’s but still very good. It became thicker when cooled down.
My dough was stickier with 350g all-purpose flour so I added some more until it became the same consistency in the video. I got 25-ish small donuts. After frying, the donuts had huge pockets of air where I could put the filling in. I had enough custard for all of them.
The donuts are soft but not Krispy Kreme soft. Overall, very good recipe! Really recommend! xx
