    I'm not a vegan by any means but thanks to your recipes I've been able to make incredibly satisfying vegan or vegetarian meals that make me feel full and very good. I think I've reduced my meat intake by over 50% thanks to your channel in just a couple of months. Thanks for the amazing recipes and inspiration!

      And I’m here on a consistent basis now because I’m trying to reduce my meat intake and help with bloat . These anti-inflammatory meals are delicious. I made one last year around Xmas for my family and it was DELICIOUS

    That highly nutritional meat around the seeds in squashes can be blended with honey and coconut oil/milk/cream/(or you choose something) then frozen for a fantastic treat later. I separate the seeds of all squashes and pan toast or bake for a delicious snack as well.

      Great idea to reduce waste, vegans don't consume honey so it'd probably be maple or agave or date syrup etc 😊

    I'm a Greek guy who is not vegan but i don't eat meat a lot, maybe once a week.

    Thanks for this soup recipe! I put my winter squash in the microwave on high power for 45 seconds to slightly soften; making it easier to cut open. Works every time.

    I love this idea. Add it to the growing list of your recipes that I am itching to try. (I do not eat either coconut milk or cashews, but I would try almond milk, with maybe a bit of thickening if needed.)

    One of my favorite packaged foods years ago was Campbell’s Select Gold Label Butternut Squash Soup. It was a savory soup with potatoes added. I’ve never been able to replicate it since they stopped making it, and every other butternut soup recipe I’ve found is on the sweeter side with things like apples or nutmeg. I miss that soup so much. 😢

    First of all, Andrew, you have the most majestic beard I've ever seen. Also, I LOVE your chilled videos. Makes me enjoy again cooking. Means a lot to me, since I lost my passion for cooking a while ago.
    Second, normally I am not such a fan of a pumpkin soup, BUT apples? Now it is getting interesting! Also, your alternative using instead of butternut, sweet potatoes is a great idea. Going to try both though!

    Looks delicious! Dereck Sarno roasts his squash whole so it's easier to cut and peel. I wonder if that would have worked well here.

    I have been learning how to make soups and its the been the best thing for me to eat. I can make a lot and freeze it until I want it. The kittle wisk always hiding😂😊.

    in case you see this, i recommend roasting the butternut squash WHOLE, until you can stick something through the fat part easily, this makes prep so much easier, it also locks in some flavour you miss regardless of how you're going to use the butternut squash afterwards, and makes peeling easy if you want to keep it more whole for something like a filet - stolen from Derek Sarno! good tip

    I haven't tried roasting celery, but I am going to make this recipe. Who knows? I might find I like roasted celery and think up other ways to use it.
    I like roasted onions to have dark brown edges when I roast them. This is an interesting soup.

    As always, perfect timing. I just picked up a buttercup squash from my CSA today. The weather turns cooler tomorrow and I am ready to start making soup!
    I can’t have coconut milk (allergy), but have recently discovered Country Crock’s plant cream. Have you ever used it? I’m loving using it as a substitute here and there where needed.

      @@thenarddogcooks, I made it and I am in absolute love with it!! Honestly the best version of butternut squash soup I’ve had yet! Amazing! I used the trick of two pans and baking two different times. I also used ambrosia apples. Amazing!!

    I cook !y butternut in the crockpot. Wash, put the whole squash in, no liquid, cook on low 6 hours. Soft as butta.

      it is slightly! spice variance, added ingredients and small change in the method. I am looking to make a butternut squash soup that is more savory, which will be totally different.
