I'm not a vegan by any means but thanks to your recipes I've been able to make incredibly satisfying vegan or vegetarian meals that make me feel full and very good. I think I've reduced my meat intake by over 50% thanks to your channel in just a couple of months. Thanks for the amazing recipes and inspiration!
And I’m here on a consistent basis now because I’m trying to reduce my meat intake and help with bloat . These anti-inflammatory meals are delicious. I made one last year around Xmas for my family and it was DELICIOUS
That highly nutritional meat around the seeds in squashes can be blended with honey and coconut oil/milk/cream/(or you choose something) then frozen for a fantastic treat later. I separate the seeds of all squashes and pan toast or bake for a delicious snack as well.
I made this for dinner and my meat eating husband and I REALLY loved it! Wow! What great flavor! Need. Your. Cookbook!! I have arthritis so your anti inflammatory recipes are going in the rotation. Thank you so much! ❤
I'm a Greek guy who is not vegan but i don't eat meat a lot, maybe once a week. I'm a Christian orthodox and I'm fasting regularly,at least I'm trying,so I'm very happy that i found you. Excuse my English and greetings from Greece!
Ooooo, I love squash soups! I’ll happily eat them for any meal, and I’m always looking for something new or a little different. This one will be going into the rotation this week - thank you!
Love it!! Thanks so much for being so thorough and showing every. Single. Step! I am learning to cook for the first time and it’s so incredibly helpful to see everything and have every detail explained and written out. Thank you, thank you, thank you!! 🙏🏼❤
Thanks for this soup recipe! I put my winter squash in the microwave on high power for 45 seconds to slightly soften; making it easier to cut open. Works every time.
I bought a beautiful butternut squash and have been undecided on which one of the recipes I have to use. You just helped me make my decision! I like the addition of the apples and carrots! Perfect timing! Happy squash season ❤
I cooked it for the family and it went down well with all of them including the children. Although the wife wished there wasn't any cinnamon or nutmeg in it 😂
My friend, you have to check Derek Sarno's videos this week on prepping out butternut squash. Changed my life. I also made his dish but topped it with one of your garnishes. Delish.
I love this idea. Add it to the growing list of your recipes that I am itching to try. (I do not eat either coconut milk or cashews, but I would try almond milk, with maybe a bit of thickening if needed.)
One of my favorite packaged foods years ago was Campbell’s Select Gold Label Butternut Squash Soup. It was a savory soup with potatoes added. I’ve never been able to replicate it since they stopped making it, and every other butternut soup recipe I’ve found is on the sweeter side with things like apples or nutmeg. I miss that soup so much. 😢
First of all, Andrew, you have the most majestic beard I've ever seen. Also, I LOVE your chilled videos. Makes me enjoy again cooking. Means a lot to me, since I lost my passion for cooking a while ago. Second, normally I am not such a fan of a pumpkin soup, BUT apples? Now it is getting interesting! Also, your alternative using instead of butternut, sweet potatoes is a great idea. Going to try both though!
My absolute favorite kind of soup. I’m sitting with my mom and sister, I said my man is making my soup! Then they both asked when I was making your corn chowder again, I said after this soup! By the way I just knew that whisk was under there! ❤🙌🏼
Dude! Think I’m going (vegetarian first😂) because of your recipes. My husband has been a vegetarian for 40 years and I’ve made quite a few of your recipes. All delicious!
I have been learning how to make soups and its the been the best thing for me to eat. I can make a lot and freeze it until I want it. The kittle wisk always hiding😂😊. Thanks for all the great recipes.
in case you see this, i recommend roasting the butternut squash WHOLE, until you can stick something through the fat part easily, this makes prep so much easier, it also locks in some flavour you miss regardless of how you're going to use the butternut squash afterwards, and makes peeling easy if you want to keep it more whole for something like a filet - stolen from Derek Sarno! good tip
I haven't tried roasting celery, but I am going to make this recipe. Who knows? I might find I like roasted celery and think up other ways to use it. I like roasted onions to have dark brown edges when I roast them. This is an interesting soup.
OMG, let me say it again OMG. So easy and I know its delicious. Just me but I’m sure I can freeze it if any’s leftover. Thanks. Another good soup for me. And I love the new DO!!!’😊
As always, perfect timing. I just picked up a buttercup squash from my CSA today. The weather turns cooler tomorrow and I am ready to start making soup! I can’t have coconut milk (allergy), but have recently discovered Country Crock’s plant cream. Have you ever used it? I’m loving using it as a substitute here and there where needed. Thanks as always for the great recipes and ideas! I appreciate you!
@@thenarddogcooks, I made it and I am in absolute love with it!! Honestly the best version of butternut squash soup I’ve had yet! Amazing! I used the trick of two pans and baking two different times. I also used ambrosia apples. Amazing!!
I love a goid soup! So as i was watching this thinking I had everything I needed, was so sad to realize I didn't have coconut milk, so will be making tomorrow instead❤
it is slightly! spice variance, added ingredients and small change in the method. I am looking to make a butternut squash soup that is more savory, which will be totally different.

Thank you not just for the lesson & recipe, but for how artfully your videos are done - calm and delicious.
That highly nutritional meat around the seeds in squashes can be blended with honey and coconut oil/milk/cream/(or you choose something) then frozen for a fantastic treat later. I separate the seeds of all squashes and pan toast or bake for a delicious snack as well.
Great idea to reduce waste, vegans don't consume honey so it'd probably be maple or agave or date syrup etc 😊
@@Lyran7 absolutely!! I just bought my first batch of date syrup, yum! I love agave and maple syrup, great suggestions💚maybe even coconut sugar 😁
Yum
@@JustineEllushon thanks for the idea 😁💚
That sounds really good I will try this.
Covering the garlic in the nook of the squash for baking is unreasonably adorable. Can’t wait to make this one :)
Love the talk as you go video.. so much better than explaining after
I really appreciate how different you made it in comparison to the recipe notes. It seems a lot easier. Maybe I'm just visual.

Beautiful demonstration. I like the idea of using cashews instead of the coconut milk.
You make cooking seem so easy and elegant! Really appreciate your videos! 🤩🙌🏾👍🏾
🙏🏾❤️ thank you so much!
Your food is always so gorgeous! A treat as usual, thank you Andrew.
Thanks again! 😊❤️
@@thenarddogcooks you are so welcome! Thank you for the inspiration. I know your beautiful family must be thrilled with leftovers every week!

Good looking soup! I started roasting the squash whole and peeling once cooled a bit.

totally get that. I haven't tasted it myself, but it would be nice to have a butternut squash soup that settled more as a savory taste, for a change

Felt like a Hey Arnold music themed Cooking episode lol. good stuff
😂
May I ask that the soundtracks be listed? They're superb.
the blinders by Hara Noda 😊
I always roast the squash whole and then scoop stuff out…a bit less carmelization but easier to manage 🤷🏽♀️
What did you brush the veggies with?
This is making me want to get a blender, I broke mine a couple of years ago
Glad I saw this before I went grocery shopping!
Keep those knives sharp! 🔪
Me too! Will do! 😊
I need to try this soon I still want mys to be a little chunky then creamy
Is this different from the one last fall?
it is slightly! spice variance, added ingredients and small change in the method. I am looking to make a butternut squash soup that is more savory, which will be totally different.
As a non vegan, this is an amazing recipe. I just substitute actual dairy products for the vegan substitutes. ❤
❤️🙏🏾
This is on my must have list. Also subscribe 😊
I want to be like this guy.
I need vegan recipes without spice, my stomach cannot handle that
I LOVE your bear feet mittens!
Put the squash and carrot in earlier then just add the rest
