Gluten Free Layer Cake Recipe | How to make gluten free cakes light and fluffy | Gluten free baking

    It's my Momma's birthday and she is coeliac so I'm making her a gluten free layer cake. This is a vanilla sponge with vanilla whipped cream and fresh strawberries.
    Here is the recipe:
    Weight 5 eggs in their shells, and whatever the measurement is, use that to weigh out your gluten free self raising flour, caster sugar and butter.
    Xantham gum (it's usually 1/4tsp per 200g flour, so you just need to work that out based on how much your eggs weigh)
    1tbsp vanilla bean paste (or extract)
    3tbsp milk
    2 pots of double cream (I think they were around 220ml each)
    3tbsp icing sugar
    1 more tbsp vanilla bean paste (extract)
    You'll also need 3x8 inch tins.

    This looks amazing, someone in my family has recently been diagnosed with gluten intolerance so I’ll try this for their birthday. Just a question: what is self raising gluten free flour and where to find it? I have been baking with a mix of oat flour and rice flour and almond flour + quite some baking soda but the cake is not really fluffy.

      Hi, thank you! In the UK, gluten free self raising flour is readily available in supermarkets in the “free from” aisle. If you’re not from the UK, I’d suggest a gluten free all purpose flour, but you’ll want to add baking powder to it. You’ll also need to make sure the baking powder you use is gluten free too (most are, but it’s worth checking). Hope that helps 😊
