Great job! Could you add a little coconut flower to thicken it if you wanted to? The thickeners sometimes make a slimy texture. I only have have a cup of heavy cream left so trying to improvise 🙂

Hi Maya! I just made this soup and it was delicious!! I followed your exact directions (I follow a low-carb diet) & I didn't even have to add extra thickener. I did add a teaspoon of salt and a dash of pepper after tasting, probably because I only had mild cheddar cheese on hand instead of sharp. I'll buy sharp cheddar cheese the next time I make this. Thanks so much for this recipe.
So glad you liked it, Marianne! Yes, the amount of salt varies depending on how salty your brand of broth and cheese is, and pepper is just to taste. I do prefer it with sharp cheddar, but often make it with mild for my kids.

Yum yum. But you didn't use the best part of the broccoli. The stem. I just chop all of the head up except the bottom 2 inches of stem. (That goes to my dog) and then I plop it into my cool food processor...zoom zoom. Then while I sauté the garlic I add 8oz cream cheese and melt that into the garlic butter. Then everything else is the same. Yum Yum 😋
