  • Chess Pie, along with its cousin Buttermilk Pie fall into the category of what is called "desperation pies" or "make-do" pies. I found some really interesting articles on these pies that I thought I would share with you:

    Wiki had some really interesting info on the strange name associated with this mess of deliciousness:
    "The origin of the name chess pie is unknown, but many theories have been proposed. It could be a derivation of "cheese pie", the combination of eggs, butter, and sugar making a custard like filling that is similar in texture to British cheesecakes and lemon curd;[3] it could be named after the town of Chester, England;[4] it could be from a piece of furniture used prior to home refrigeration called a "pie chest", in which pies were stored; or it could be an eggcorn of "It's just pie," due to a misinterpretation of the pronunciation "It's jes' pie" in Southern American English.[5]"

    Here is what you'll need:
    1 store bought frozen deep dish pie shell, thawed
    1 1/4 cup sugar
    1 stick melted butter
    1/4 tsp salt
    3 eggs, beaten
    1 tsp vanilla extract
    1 tbp AP flour
    1 tbs cornmeal mix (or yellow cornmeal)
    1 tbs vinegar
    1 tbs evaporated milk
    Mix all ingredients well. Pour in unbaked pie shell (do not dock. Bake 350F for 45 minutes to 1 hour until custard is set.

    How do get your top so golden brown like that? Do you not preheat it? I can never get mine that pretty?

      I almost did a from scratch crust to see how it'd go. But I didn't get that ambitious.
