My go-to noodle dish is soy sauce, brown sugar, ginger, garlic, chilli, Chinese 5 spice, and sesame oil simmered on top of whatever veggies I am adding and then mixed into noodles. So simple but so good
here's a tip mina: soak your shiitake mushrooms in a bowl of water before using them! they're often quite dry if you put them in your dish just like that, so just cover them in water for ~6 hours or even overnight and then squeeze them out, chop them up and toss in whatever recipe you'd like! they come out with this wonderful meaty texture and soak up any sauce or marinade
Yeah that's true! I don't know what effect it has if you don't do it but I grew up with first soaking them in cold water for 6-24h to be able to cook w them (and that's also what the internet recommends to do). :)
And also, the water you soak the dry mushrooms in becomes really flavourful. We use it in place of stock in other recipes. It’s also great to steam rice in.
My favourite noodle dish is also a ricenoodle salad, inspired by my favourite vietnamese restaurant. It’s made out of thick rice noodles, fresh, thinly chopped salad, carrots and cucumbers. All mixed with a sauce consisting of some natural peanut butter, rice vinegar and white wine vinegar in equal parts, soy sauce and a bit of sunflower oil. I really love adding cilantro and roasted peanuts to the salad as well.
My favourite noodle recipe is a special dish only available in Bari in southern italy called Spaghtetti All'Assassina, which is naturally vegan. You put chopped chilli and garlic in a pan and add your sugo after they have turned fragrant. Then (and that is unusual for italian pasta recipes) you add the uncooked spaghetti directly into the sauce. You will need to prepare a broth out of hot water, salt and tomato paste to make the pasta cook through. And then there is the second special part - you actually need to burn the spaghetti for a real Al'Assassina - which makes the pasta slightly crispy. If you want to try it you can also google how to make it :-)

your reaction to your book was so adorable! anyway, I've been eating this noodle dish where you just put some red onion and garlic onto a pan first, then add tomato paste and sweet chili sauce (and maybe sriracha/gochujang if you like spicy stuff), then some oat cooking cream and oat milk to thin it out (obviously other plant-based creams and milks work too) and then add those ready to use red lentils and whatever noodles you prefer! it's so good and so easy!

Just made that first chimchurri-inspired pasta. It was SUPER easy and flavorful! Refreshing and easily adjustable based on what you have. I added 1 tsp of ginger and 1/2 tsp each of ground basil, oregano, and thyme. This is ideal for those who prefer a simple and subtle (yet adequate) palate. Thank you!

Mina it looks Gorgeous!!!!!!! I really hope to get my hands on a copy.. Also love all these noodle recipes.. I'm a noodle-a-holic!!!! Noodle addict.. It's one of those things you can do simply or upscale it and make it special without too much time, too much complications and make something amazing. To answer your question: my top 3 green veg are 1. Brussel sprouts (my mom makes the best caramelized roasted ones) 2. Broccoli and 3. Kale And my favorite way to have noodles is a recipe I found online that I've adapted, * You can use any brand noodles, I use the Mi Goreng ones. * Boil water and cook up your noodles in one pot remove them when done, reserving the water keeping it on the heat. * In a separate bowl mix the flavor packets, soy sauce, fish sauce/oyster sauce (or a combination of both), siracha/chili oil, vinegar, mayonnaise, garlic finely chopped. How much of each you add is up to you but I use one spoon of each. Then crack in an egg and whisk up. * This is optional but I like veg & added this to mine just to make it more nutritious & interesting. I'll cook up some frozen veg, or whatever I have on hand, just bring them to the boil in a pot or pan till cooked to how you like them, and season them if you want to but with all the other flavors I don't bother. * Once everything is cooked, you're going to take a ladle of the noodle water, and whisk it into the sauce mixture, and depending on how saucy you like your noodles you can add more or less, its just to emulsify the sauce. Ideally I have the noodles and veg going at the same time while I prepare the sauce so it comes together pretty fast when everything's cooked. * Then add your veg and noodles into the sauce and mix together and enjoy.. * You can serve this with a fried/boiled/poached egg too, some spring onions and some sesame oil to taste too if you'd like..

Hi my family is from argentina and we eat chimichury all the time and i think your recipe for noodles with it could be great but the recipe of the chimichury kinda lost in translation... if you wish i would love to send you an original recipe from my grandma, its a really great sauce and you can put it on bread, salads, meat alternatives and what not chimichury to argentinian is like butter to french 😅
I know some people are probably going to get on me about this, but technically scallions or green onions are not spring onions. We had this discussion at the grocery store where I work the other day and we looked it up. I'm really not trying to be critical at all, as I know a lot of Europeans call them spring onions and if you all know the difference between those onions that come in early and have a small bulb at the bottom Plus the edible stock that comes out, that's really a spring onion. I love your channel and I can't wait to get the book!

Good idea. I also don't cook with sesame oil. I just add it at the end for the flavor.

crunchy peanut butter and garlic goes well with noodles too...and its pretty filling too
