    INGREDIENTS + NOTES
    #1 DIY Instant Noodle Soup 0:26
    for the crispy tofu:
    200g (7oz) firm plain tofu
    1 tbsp vegetable oil for the pan
    1 tbsp cornstarch (or flour)
    generous pinch of salt
    optional: other spices of choice: turmeric, pepper, paprika, onion powder (a dash of each)
    for the soup:
    500ml hot water (2 cups), more if needed
    1 vegetable stock cube
    1 tbsp soy sauce
    1 tbsp balsamic vinegar
    1 tsp sugar
    1-2 cloves garlic, minced
    1 spring onion, divided in white and green part
    4 small sheets of flavored seaweed (OR 1 regular nori sheet, ripped to bits)
    1 tsp sesame oil
    optional: dash of chili flakes
    1 block of ramen/mie noodles (for 1 serving)
    1 handful frozen edamame
    1 handful baby spinach
    1/2 tsp to 1 tsp miso paste
    → serves 1
    #2 Korean BBQ Style Tofu Bowl 2:57
    200g (7oz) firm plain tofu
    1 tbsp cornstarch (or flour)
    for the marinade:
    1 tsp gochujang (or more to taste)
    1 tbsp sugar
    1 tbsp soy sauce
    1 tbsp balsamic vinegar
    1 tsp sesame oil
    pinch of salt
    1 tbsp water
    optional: pepper, paprika, onion powder (a dash of each)
    Also:
    lil bit of oil for the pan
    1-2 servings cooked rice
    1-2 servings steamed broccoli
    sesame seeds for serving
    optional:
    vg chili mayo for serving
    OR → try this quick additional dressing:
    1 tbsp soy sauce
    1 tsp sesame oil
    2 tsp agave
    2 tsp balsamic vinegar
    #3 Cozy Leek & Potato Soup 4:54
    2 leeks
    250g-300g potatoes, peeled (8.8oz - 10.5oz OR 3 medium potatoes)
    1 tbsp olive oil
    1 handful cashews
    1 dash chili flakes
    2 cloves garlic, whole, peeled
    1 tbsp balsamic vinegar
    1 tbsp sugar
    1 vegetable stock cube
    625ml (2 ½ cups) water, more if needed
    salt, pepper to taste
    optional: 1 tsp sesame oil
    optional: fresh cilantro, parsley for serving
    for the crispy chickpeas:
    1 can chickpeas (400g = 14oz)
    1 tbsp vegan butter
    1 tbsp soy sauce
    1 tsp sugar
    → serves 2
    #4 Protein Pasta 7:15
    1-2 servings pasta of choice (i like half lentil half regular)
    for the sauce:
    1 - 1 ½ cups premade tomato sauce (225g - 350g)
    200g silken tofu (7oz)
    1 heaping tbsp hummus or vg cream cheese
    optional: 1-2 handfuls vg pizza cheese
    optional: 2-3 handfuls baby spinach
    → serves 1-2
    #5 Homemade Kimbap 8:35
    1 cup (200g) short grain rice, dry
    1 ¾ cup (430ml)
    generous pinch of salt
    1 tsp sesame oil
    → yields enough rice for 3 rolls
    HOW TO COOK RICE:
    wash the rice and add to pot w water, salt, sesame oil
    bring pot up to a quick boil
    reduce heat to medium low
    once the water has calmed down a bit, put on lid half way
    allow to simmer/steam for 15 min
    take off the heat
    let cool completely, with lid on fully
    3 sheets seaweed
    fillings of choice:
    cucumber, korean radish, carrot, tofu, garlic spinach, vg cream cheese (1 tbsp per kimbap roll) ...
    serve with soy sauce, chili sauce, etc

      so real for that because its just such an easy to get greens in... its either i throw in some spinach or i grab a bunch of salad mix and eat it on the side bcz lets b real. i do not have the patience to cook more than one dish when im starving after getting home

    I've been eating a lot of mashed potato bowls. Mashed potato topped with nutritional yeast, air fried seasoned tofu cubes, broccoli or kale, and sauce (BBQ sauce, gravy, etc).

I watch so many videos for homemade recipes no probably yours is the first YT video featuring a home-chef who actually recognises ingredients with proper labelling.     i would recommend adding sesame oil after a dish has cooked! boiling it/heating it too much actually causes the flavour to be less good :0!

    I love mixing pearl cous cous with my favorite salad dressing and just throwing it together with raisins, cashews, and seasoned chickpeas. It’s my go to salad

    My favourite quick meals are a) store -bought gnocchi, starting off pan-frying them and then adding premade pasta sauce, let it simmer and thicken a bit and then add cheese, b) Store bought chilli, some kind of stew, etc, warming it up in a pot and then adding some couscous for a yummy spoonable dish

    My favorites right now are oven baked veggies (just had pumpkin & brussel sprouts with yogurt yesterday) and easy curries. Like I will have a chickpea cauliflower curry this weekend, doesn't take long to put together but the perfect comfort food. In autumn/winter I aim to have a lot of soups or one pot meals as they are easy and quick.

    Ok here's a super easy side dish for rice ("Japanese inspired")
    -in a small pan, heat up 2/3 cup of black beans (I always use frozen ones that I cook for meal prep, tastes better in my opinion)
    -add 1,5 - 2 tbsp of mentsuyu or sweetened soy sauce + 1 tsp sesame seeds
    stir and done!
    Edit: Even though it fits perfectly with "traditional Japanese" style meals, my recipe is probably more similar to the Korean cuisine, precisely to a side dish called Kongjang. If you want something more authentic, I'd highly recommend you to search up a recipe for it.

    I have obsessed with making soya chunks cooked with some soya sauce, sugar and ketchup / tomato chilli garlic sauce lately. I eat them with oatmeal or roti . Super easy and quick.

    About cooling the noodles down before eating them: I don't have a dishwasher so i plate the noodles and then proceed to wash all the dishes; the noodles are a bit cooler when i'm done😂

    I love your videos so much, Mina! They always calm me down, and inspire me, of course. My latest food obsession: vegetable frittata!
    So basically you sautee veggies of your choice (e.g. onion, peppers, aubergine, chickpeas) and then mix them with the "egg" mixture in a oven-proof dish and bake for 25-30 min. Egg mixture = plain tofu, blended with some water until smooth, plus chickpea flour, nutritional yeast, salt, pepper, italian herbs and other spices of choice. It should have a cake batter-like consistency!

    I love your recipes and videos, they cheer me up. Right now I am recovering from surgery. Once I can walk to the market I will make that potato soup!! I do always use a hand blender right into the pan. Less clean up😊

    My lazy go to meal atm is Kare, the japanese Curry.
    Just boild rice, chop potatoes, carrots, mushroom an tofu. Stir fry the veggies and tofu, add ~500ml (or whatever amount you want to make) to the veggies and let it cook for ~ 25 minutes.
    After that you just add the "Golden Curry" Paste (there are also recipes on the internet to do the paste by yourself, I just buy mine) to the pot, let it cook for 5 more minutes and you got a perfect lazy meal ♥

    Hi, thank you so much for all this recipe ideas ! ☺️ I want to drop one of my absolute winter favorite meal, if you want to try it out !
    It's basically inspired by the "rougail saussice" but vegan version.
    Igredients: Vegan sausage of your choice ( I prefer spicy ones), onion, garlic, any vegetables you have on hands (I usually use zucchini, but can be replaced by bell peppers), 1 can of chopped tomatoes, some spices (my favourite is a mix of cinnamon, black pepper, cloves and nutmeg), and the star of the show: Kale cabbage. ⭐️
    You throw all the spices, onion, garlic, sausages and the veggies in a big pot or a large pan. Stir for up to 8 mins, then add the chopped tomatoes (plus a splash of water). Let it cook for about 15min.
    Then finally add on top of the stew the kale leaves (do not stir !) And let it steam by covering the pan/pot for a couple minutes.
    You can serve this dish on top of some pasta or rice with some vegan cheese !

    I particularly liked the suggestions for the quick miso soup
    My go-to snack are these instant noodle packages but I would like to reduce waste and was wondering how to create the flavors myself. Hopefully you will share some more easy-to-make dishes in the future. I am looking forward to more inspiration like that. (:

    I've been trying to add more simple veggie recipes - have been doing too much mock meat or more complicated dishes. One surprising but delicious thing I've come across: raw cabbage leaves filled with mashed chickpeas, dressed with a little harissa and some sliced kalamatas! So super easy and pantry friendly for breakfast, lunch or snack.
    Great ideas in this video, as always ❤ Hard no on ice cubes in soup though 😂

    I'm going to write my favorite easy meal in german: bunter salat (am liebsten solchen mit Erdballen unten dran) mit klein geschnittenem Gemüse wie Möhren, Tomaten, gurke, paprika...was man grad da hat und dazu knusprig angebratener Räuchertofu (oder andere sorte). Als Sauce entweder ein Joghurtdressing oder Vinaigrette, wie man es mag oder passend da hat. Man kann auch noch nüsse odrr kerne mit reinmachen, Feta vielleicht... Supereasy und schnell gemacht, gesund und variabel!

    My go to meal of recent has been pasta with the trader Joe's vegan pesto and the whole foods frozen vegan chicken bites! Add in some nutritional yeast and vegan parmesan

    Also, another difference for Korean kimbap vs Japanese sushi is that for kimbap, they tend to lather on sesame oil on the seaweed after it's rolled up. I didn't grow up with my mom doing that but my mom was health conscious. lol You use the same type of seaweed (nori/gim) but it's just that extra step of lathering on the sesame oil afterward. Also, you can toast the gim over a flame too for extra flavor before rolling!

    Hast du das Gochujang aus einem Asialaden oder bekommt man das in einem der Supermärkte? Tolle Rezepte! Und super Trick mit dem Eiswürfel!
    My favourite quick meal: cut a sweet potato in little cubes, fry these in a pan with hot oil and a cut up onion. When the sweet potato is halfway cooked, add a can of kidney beans, season everything with your favourite seasonings (I usually just use a Bratkartoffelgewürz spice mix and garlic powder). When the sweet potato is almost done, add a couple of handfuls of spinach and let it wilt. Serve with spiced ketchup (Gewürzketchup), salsa or vegan sour cream.

    Sprinting to the store for tofu & sushi rice - for me if I'm on a time crunch I open a jar of pasta sauce, cook some frozen broccoli and go for the ultimate fast starch store-bought gnocchi

    My favorite easy recipe is oven-roasted gnocchi with sweet potatoes and cannellini beans. Basically just throw a package of store bought gnocchi on a baking sheet with one cubed sweet potato, some sliced red onions, and a few cloves of garlic. Roast until the sweet potato is cooked, then add in a can of cannellini beans and a bag of fresh baby spinach or arugula. Top with fresh (or dried) thyme, salt, pepper, and Parmesan cheese.

    2:30 yes! My mom used to add ice cubes to my soup when I went over to my grandmas house for dinner. Her soups were always piping hot and the ice cube cooled it down enough for us to eat it. I don’t think it’s weird :)

    i'm obsessed with tortillas rolls with peanut butter, holding up a banana with spiked chocolates that i put on air fryer for 10 minutes on aluminum paper. Than i just open tha aluminum and eat it in college without any mess

    My go to 15 min meal is one pot pasta: cook 1 pack of tomato Passata (passierte Tomaten). 2 Cups of water, salt, sugar, spices, 1 cup of cream or creamecheese and 200g noodles in a pot till soft, add desired veggies, top with nutritional yeast, finished

    You have to watch Honeyjubu. I think you'd like her recipes. Also- I sometimes make kimpab rice with umeboshi liquid instead of sesame oil. Worth a try. Also- fry the nori sheet for a few seconds on a hot pan before asembling. And when rolled brush it with sesame oil. Then you don't need a wet knife.

    That grated tofu sounds and looks great i think i will try it! And i’ve been adding tofu to pasta sauces before, it just makes a nice creaminess with more satiating protein too! Also i spotted the little washed your rice comment- i have to admit- i rarely do this either 😅

    The biggest difference between sushi and kimpa is whether sashimi(row fish)is used or not🤔Japanese people mainly eat shahid with rice and fish only.😊

    The ice in the noodles is common in South Korea they add it to make the noodles cold..like in summers...there is a dish called naengmyeon..n the actual translation is cold noodles..so ig it's not controversial to add ice in noodles lol

    When Koreans cut gimbap, they put sesame oil on gimbap and knives. That will not only cut the gimbap better, but also increase the flavor

    I have been loving Dubu Jorim lately, super quick and easy, leftovers can be refrigerated for up to 3 days and it can be eaten hot or cold!
    Ingredients
    Extra Firm Tofu (around 400g) (whatever you have is fine - normal is standard, smoked worked as well tho)
    For the Sauce:
    3 Cloves of Garlic (or more I suppose, I am not your god)
    Spring Onions - 4-5
    1 Tbsp Gochugaru (Hot Pepper Flakes)
    1 Tbsp Sesame Oil
    2 Tbsp Sugar (or some sort of syrup should work as well)
    60ml Soy Sauce
    60ml Water
    (Optional: Some Mirin)
    (Optional: Some Lime Juice or Rice Vinegar)
    (Optional: Some white sesame seeds to garnish)
    (Optional: Some rice to serve with)
    Recipe:
    Pat your Tofu dry, slice it thinly, pat dry again
    Heat up a drizzle of oil and pan-fry your Tofu until it looks delicious and a bit golden
    In the meantime, chop your garlic in tiny pieces (or use a garlic press), and cut your spring onions (pro tip: use a scissor to make beautiful rings)
    Mix all the ingredients for the Sauce into a beautiful delicious mixture
    Once the Tofu is golden, tip the sauce into the pan and stir/braise for a few minutes, until the Tofu has absorbed some of the deliciousness and the sauce has thickened
    Serve! I enjoyed it with some Jasmine Rice, white sesame seeds and more spring onion to garnish - I also drizzled a healthy dose of fresh lime juice on top
