Biscoff Lotus Cinnamon Rolls 💛

  • Ingredients:
    Dough
    - 3/4 cup warm milk
    - 1 sachet active yeast (2 1/4 teaspoon)
    - 1/4 cup sugar
    - 1 egg + 1 yolk
    - 1/4 cup melted butter
    - 3 cup all-purpose flour
    Filling
    - 1 cup crushed Lotus biscuits
    - 1 tbsp cinnamon powder
    - ¼ cup butter, softened
    Frosting:
    - 120g cream cheese
    - 3 tablespoon butter, softened
    - 3/4 cup icing sugar
    - 1/2 teaspoon vanilla
    - ½ cup Lotus spread, room temp
    - crushed Lotus biscuit
    Direction:
    1. In a medium bowl add milk and yeast and mix together.
    2. Add in sugar, eggs and melted butter and mix till well combined.
    3. Stir in flour till dough forms.
    4. On a floured surface knead the dough for around 8 minutes till slightly sticky ball.
    5. Transfer the dough into an oiled large bowl and make sure the dough is coated in oil.
    6. Cover with plastic wrap and warm towel for 1.5 hours.
    7. Preheat oven to 180°C.
    8. Once the dough has doubles in size, on a floured surface roll out the dough into a large rectangle.
    9. In a zip lock bag crush Lotus biscuits.
    10. In a small bowl mix together the crushed biscuits and cinnamon powder.
    11. Spread the softened butter on the dough
    12. Add the mixture on top of the dough and pat down.
    13. Roll the dough tightly from the short side.
    14. Cut into 1 inch sections
    15. Place the rolls into a lined baking dish tightly together.
    16. Cover with warm towel for 30 minutes.
    17. Bake the rolls for 30-45 minutes until just golden on the sides.
    18. Allow the rolls to cool.
    19. Meanwhile, in a medium bowl mix together cream cheese, butter, sugar and vanilla and mix till creamy consistency. Fridge the frosting till the rolls cool.
    20. Heat up the lotus spread in microwave for 20 seconds.
    21. Top the cinnamon rolls with frosting, lotus spread and crushed lotus & enjoy.
