This Slow Cooker Chicken Tortilla Soup will become your new favorite soup recipe! It's loaded with veggies and chicken and full of flavor. Everything gets put in the slow cooker and simmers away for an easy weeknight meal! Then all you have to do is shred the chicken once it's done. Top with cheddar cheese and toasted tortillas for the ultimate cold-weather comfort food!

I loved the idea so much but unfortunately I don't have a slow cooker :/ I know you developed the recipe accordingly but if there's a way to make the recipe with a regular pot I would like to learn that too, since I really liked the idea and the recipe overall❤️🙏

Oh yes! You could make it in a large soup pot. All you would do is sauté the onions first until they’re fragrant and translucent then add in all the other ingredients just like I did for the slow cooker. Simmer until the chicken is cooked through remove the chicken and set it aside. And continue to simmer the broth for about 20 minutes just to mellow the tomatoes out then shred your chicken put it back in until it’s warmed through and then we go! Hope you enjoy it

I just have to tell it like it is - Ms. Beth, I only watch two Food and Entertaining Gurus....you and The Barefoot Contessa (Ina Garten). You each have your own inimitable style, drawing your viewer in with recipes that are not only AMAZINGLY delicious, but delivered in a way that is easy to follow, with ease and an air of casualness that lets us believe ---- "oh I CAN do that" ! Dinner for 32 - done! A gourmet picnic on the beach for 2 - check! Will I ever be able to add a Cookbook (hard cover please) by YOU to my Ina Garten collection? Please say YES and know that it will hold pride of place in my kitchen.
Oh Ella are you were so kind! I feel so honored to have captured your attention! Ina is my absolute favorite as well I met her once in a book signing and I was in awe ha ha ha! I would love to do a book one day but I realize how much work it is and the thought of doing one while also running a channel and raising two kids seems like the straw that would break this poor camels back lol! But my girls are getting older and soon they will be going off to college 🥲and I will need a new baby to keep me busy and I think a book project sounds perfect! So not to worry it’s on the bucket list and you will all be the first to know when it happens!

I don't know how on earth you do it Beth! This soup is everything and a bag of (tortilla) chips, pun intended! It has a ton of nutritious vegetables and legumes, it has lean protein, it is hearty, it has depth of flavor from the spices, it looks vibrant and colorful, it has diverse textures, it takes mere seconds of assembly and you look like supermom presenting this hearty and appealing meal after finishing a day packed with your kids' after-school activities. It looks absolutely amazing and no one will know you spent minimal effort making such a crowd pleasing dinner. This recipe is genius and you are a genius for coming up with this! I am going to go out on a limb and say that you, Beth La Manche, are 50% Ina Garten because you are so good at cooking and 50% Albert Einstein because you are so clever! And maybe 10 percent Demi Moore because you both have the same hair that is dark, long, glossy, and looks like it came out of a Pantene commercial. Bravo!

I need to have one of our French friends from the south (where this dish originates from) show us the authentic way to make it! Since my husbands family is from the west coast of France and recipes are very regional so i need to find the right person to teach us both! Ha! Since ive never made it only enjoyed it at restaurants :) but a good goal to work on for next summer! 👍💕🙌

What a great combination - Beth + Chicken Tortilla Soup + crockpot. It’s all my favorites rolled into one! 😄 Honestly, though, some days you know you’re not going to be busy or just won’t want to make dinner later and this is the perfect. It’s cold here today in North Carolina - high only 69 - and this just *might* be going into the crockpot on high in a minute for late lunch! Thanks for always having a delicious recipe for us. Wow, looks delicious! If I have no jalapeños on hand I use Mexican style diced tomatoes, those great tasting jalapeños are already there. No black beans? Canned and rinsed pinto beans are great too.

Not at all, it would still be good! You could swap the black beans for rinsed garbanzo beans, kidney beans or Cannellini Beans. All would be great!
