Low Carb Blueberry Cream Cheese Muffins

- These muffins have a rich, moist flavor thanks to 4 ounces of cream cheese added to the batter.
Mix dry ingredients
1/3 cup whey protein isolate
1/3 cup oat fiber OR USE 2 tablespoons coconut flour
1/3 cup finely ground almond flour
1 1/2 tsp baking powder
1 tsp glucomman or xanthan gum
1/4 tsp salt
Wet ingredients
4 ounces butter, salted
3/4 cup granulated sweetener (may want to add more to your taste)
4 ounces cream cheese
3 eggs, added one a time
1/3 cup sour cream
1 tsp vanilla extract
1 tsp blueberry extract
17 gram dried blueberries or 1/3 cup fresh or frozen berries
Mix the dry ingredients with a whisk and set aside. Using a stand or hand mixer, whip cold butter. Add granulated sweetener and blend until mixture is lighter in color. Add cream cheese and blend well. Add eggs one at a time, mixing well after each addition. Stir in sour cream, and extracts by hand. Add the dry ingredients to the wet ingredients and blend lightly. Do not over mix.
Drop into muffin tin lined with 12 paper liners. You can bake them two different ways. 1. bake at 375 for about 10 minutes and then reduce the temperature to 350 for an additional 8 to 10 minutes.
Alternately, you can back them at 350 for 18 to 20 minutes. The muffins are done with the are slightly brown and slightly firm to the touch.
As I made them with my ingredients, these muffins are roughly 3 total carbs per muffin and about 1 net carb per muffin.
Oh man...I made these yesterday...and OMG they are delicious. One of the most deliciouos keto desserts I have made, and I have made many! It's too bad I only bought a tiny bottle of Lorann blueberry oil, because I can't wait to make more! They were even better made into a sort of cake because I ran out of muffin liners. These are a must try. I did add a bit more sweetener and blueberry flavoring. So worth it.

I made these, but didn't have the blueberry extract. I zested a lemon and used that instead. Sooo good! My kids love them, too. Great recipe! And yes, they do freeze well.

Mixing the cold butter with a hand mixer is a bear!! I told my husband to enjoy these muffins because I was not going to make them often. Otherwise, they are yummy!

I made 1 mistake - accidentally mixing the sweetner with the dry ingredients - but no harm done! I subbed cherry extract and gogi berries because that's what I had available. And these were EXQUISITE!! Moist, flavorful (especially warm, with some butter on top! YUM!), and filling! I'm looking for some "go-to" make ahead options I can freeze and travel with for an upcoming trip, and these are now added to the list! Thanks again! :-)
These turned out to be one of my favorites. I used frozen blueberries and stuck in several on top of each muffin. Hubby loves them and they last a long time!

I just made these yesterday & didn't have the freezer dried blueberries so I chopped up some dark chocolate, they are delicious. You said you can make this into a cake, was wondering what size pan & how long to bake it for.
My dear husband thinks (me too!) that these are the best LC muffins he ever tasted. Try them, try not to over do on them.

This recipe is delicious. It is much like the pancake recipe you have. The issue I have with both is they don't get done in the middle. I put them in the oven on 225 for about 10 minutes to get the inside done. This is the first channel I look for recipes. Any suggestions?

You can try egg white protein. I have not tired it, but it should work.

As far as I know you would have to buy it online. However I use xanthan gum and it works perfectly! You should be able to buy that in just about any large grocery store. I know both Walmart and Kroger carry it. I'm pretty sure I have also seen it at Meijer. Hopefully that helps!
Mine were in there for 20 minutes at 375 and still not done. What did I do wrong? I don't have a blender so couldn't mix the butter appropriately, could that be why?
Let them go a little longer at 350. I've learned that I have to adjust my recipes as I have a convection oven
Thanks for responding. They turned out great and I ate 3 of them right away. Hubby even liked them. I'll do it with the convection oven next time.
actually, it might be best to NOT use convection. Try just a regular oven, but bake them longer.
What brand is the whey protein isolate and where can I get it
Whey protein isolate isn't healthy according to health practitioners. I know it's not healthy for the liver according to Dr. Eric Berg.

I would not want to eat anything like this low carb or not.
Can't understand why you eat low-carb and allow your children to form high-carb habits.
Because she thinks that they need to make their own choices. You can't force them.
