    how long you mixing the butter and speed do you use ? Thank you

      Medium high speed. I beat for about 4-5 minutes.

    Can I substitute parmesan cheese with powder cheese? Would it make any significant change to the taste and texture of pastry?

      Yes you can, but i think the texture and the taste will be different

    Hi, I have a big oven and I used 160 degree to preheat and bake but before 20min, the middle row started to burn a bit so I took them out to apply the egg wash and their skin sticked to my brush. I couldn’t even bake the 2nd around. Please advise.

      You mean the tart already burnt a bit but the tart's skin still sticky before you apply the egg wash?
