Raisin Tea Buns - Traditional Newfoundland - Bonita's Kitchen

    Today we will be making Raisin Tea Buns, these delicious tea buns are so quick and easy to make!

    Kitchen store:
    Ingredients:
    2 Cups white or wheat flour
    ½ Cup white sugar
    ¼ Tsp salt
    ½ Cup salted, cold butter
    ½ Cup Carnation Evaporated whole milk
    4 Tsp baking powder
    1 egg
    ½ Cup raisins or more
    Please Note: If you use unsalted butter you can add a ½ tsp sea salt, if you use salted butter DON'T use sea salt.
    Method:
    1. Mix all dry ingredients into a bowl, then add pieces of cold butter and mix well together.
    2. Mix egg and milk together in another bowl and add to mixture working it in with a spoon or your hand until almost into a ball.
    3. Add raisins continue on forming into a ball.
    4. Then put out onto a piece of wax paper or parchment paper. Cover with a sprinkle of flour and roll into 1/4 inch thick pastry, or pinch off the dough and shape into small or medium buns place on cookie sheet.
    5. Continue doing that until all dough is gone, or with a 2 inch cookie cutter, cut out 24 buns, place on a greased cookie pan or square pan, place in a preheated oven of 350ºf to 375ºf for 15 minutes or until golden brown or depending on your oven. Don't over bake your tea buns will be dry.
    6. Once baking is complete, remove from oven put on a serving plate eat hot or cold with butter and homemade jam.

    Such a good idea using carnation milk! must make them softer! can't believer there are some hands down..people! give Bonita love people!

    I don't know if it's because I live in Toledo, Ohio or if I have just lived a sheltered life, but I have never had tea buns. They look like a cross between scones and southern biscuits. They have earned a spot on my to-do list! Thanks for sharing them!

    I just made these tonight. I used buttermilk instead of carnation, I also used unsalted butter. I did roll out my dough then used a cookie cutter. These turned out so fluffy and absolutely delicious, not dry at all. Thank-you for this recipe

    Enjoyed your presentation of Tea Buns I liked your detailed and calm explanation of how to do them even though i have made tea biscuits before, u used an ingredients , evaporated milk, which was something i had not thought to use. thank you and keep sharing your baking ideas !!

    I added 1/4 teaspoon baking soda plus whole milk and egg washed the top only. Best raisin tea bun i ever had. Thanks Bonita!

    Here's a hint for those with arthritic hands and find it difficult to rub in the butter in the flour: I freeze my butter and right when it is time to add the butter, I grate it with a box grater (large holes) and then just stir it into the flour. It's easier for me to add the raisins before the liquid. This recipe is the same as mind and I love it!

      I do the same because of bad arthritis fingers but instead of using the box grater which is difficult for me, I use the shredding attachment on my food processor. Takes about 5 seconds and no stress on my fingers. The only negative is cleaning up the butter off the attachment but some nice hot water does the trick.

    I made this on Sunday but instead of raisins, I used shredded coconut-my nan used to make them when I was little. It was so good! It tasted just like hers. My family loved them and have requested that I make more right away 😆. Thank you for sharing and inspiring us all!!

    I am going to try this. I miss having tea buns. There is a bakery in our neighborhood that use to sell them (back when the father had the store, now that the son has it. It's all high price coffee I can't pronounce and weird hipster cakes). So glad I found your page, thanks for sharing and teaching.

      Okie dokie, we (my daughter and I) made them, delicious. We made two small batches. What we did was cut the recipe in half...one half with regular sugar and the other with trivia. Diabetes runs in my family. Both batches, fantastic. Going to put this on the make again list 😄

    8 Sept 2019: Made these raisin tea biscuits today. Best tea biscuits I have ever made. Thank you Bonita ! I lived in Newfoundland in 2012 & 2013. At that time I ate these biscuits and loved it. I tried making them a few times (followed other recipes from books) but didn't come out so well until today. I will send you pictures of my dough and biscuits in near future.

    Love me some tea buns, Bonita!! Split in half with butter and cheddar cheese and cup of coffee.
    I usually roll out and cut to shape with a glass....watched my mom do that.
    I don't add eggs to mine...never did. Not sure why or what difference it would make.

      Hi and thank you so much for your message and for stopping by. These tea buns are a very easy recipe and I'm not sure why this happened. Sometimes if the baking powder is old it may stop it from rising. Try it again and just notice if the texture of the batter is soft and a little frizzy. This would be good! Also you can adjust the temperture to 375ºf and make use you preheat the oven first. Let me know how it goes. :) Bonita

    Hi Bonita.. I’m from Newfoundland but have lived in Halifax for most of my life. Can’t believe I’m 72 and only made 1 batch of hockey pucks. So I’m going to try your recipe. One question.. looked like you used way more than 1/2 c butter. Is 1/2 cup butter correct?

    Bonita, when you say "cream" instead of evaporated milk, what type of cream? Light, Heavy, or half-and-half - Could any of those be used? Or do you mean the canned cream like Fussels' or Nestle? Thanks. :)

    I just made these but needed longer than 15 mins. maybe because I made 12 instead of 24. Its 25 mins until done. Do you put them in middle rack? I find they burn in muddle rack

      Hi Karen, Thank you for your message and for stopping by. I'm so glad you made our tea buns recipe. So many different ovens, gas, burners, oil, CONVECTION OR CONVENTIONAL OVENS. It is so tricky to know what type our viewers are using. Usually I would say in the middle rack to be safe because that would give equal heat. But in the convectional ovens you need to set the oven to bake even top and bottom, with mine I need to touch the start button twice to use both burners.... . So I'm thinking you may need to experiment on this one. The next time you make them try a different rack and use the same heat and time. I'm still trying to get use to my oven and I've had it for 5 years. Please follow up and let me know what worked for you. Enjoy and thank you. :) Bonita

    I like the way you bake. You remind me of a baker I knew as a child. He had his own bakery and everything was delicious. He did have some equipment to help him mix, but he used his hands a lot. To me, that makes things taste better. One question about the butter: would you suggest putting it in the freezer about half an hour before it is needed?
    What about using brown or washed raw sugar?
    I live in the Philippines and white sugar is very expensive since it must be processed. Brown sugar here still has some molasses in it. Washed raw sugar is basically removing everything which was squeezed out of the cane except the sugar. It's more expensive than just plane brown sugar, but still not as expensive as white sugar.

I'm glad you enjoy my style of baking, when I was a very young girl I worked in a small bakery and everything was made by hand we started work at 5am and work till 5pm.     Bonita I brought back some NL blueberries to Ottawa . Do I need to change the recipe to incorporate frozen blueberries?

    Hi Bonita, I LOVE THESE!!!!
    I've definitely had these at a bakery & they were a tiny bit larger & they had the nerve to charge $1.25 + for each ONE! Not to mention they were over baked & too dry that you would choke on it. I've been cooking & baking from a very early age. ( I was 10 going on 25 lol)
    I do have a few questions.
    Would these be considered a scone? I know the ingredients are almost the same depending on what recipe you would use. (i.e.. scones you're adding buttermilk or regular milk or cream & adding baking soda & powder & raisins or blueberries etc. lol )
    Just asking your opinion. Love watching your channel. The Raisin Molasses bread you made in another recipe...why AREN'T the loaves all in one size instead of three different ball shapes? Would it not have the same crumb or would it not turn out quite the same? Also, I'm a huge lover of cinnamon...Could it be added to the rasin molasses bread? Sorry for so many questions.       yes you can or dried cranberries, chopped cherries, whatever you enjoy. But don't work the dough so hard on the blueberries because your dough will go all blue. Enjoy Bonita

    Add your raisins to the milk/egg mixture before you do anything else. This gives the raisins time to absorb some of the liquid and "plump up".

    I put a little water of juice in my raisins and let them soak for awhile or overnight . They get so juicy and. Plump..they rise almost 2 inches high
    ...a ND gets beautifully brown .no EGG..

    Mine didn't rise it spread out can't even cut them in half for butter the only different thing I did was add vanilla .

      Hi and thank you for your message, I don't think the vanilla would make a difference to the recipe. But if the mixture is too wet it may spread out more. The texture needs to be soft and firm. Try it again sometime and I hope they tasted good for you. :) Bonita
