These are good apples to use, they keep their shape, but I have to say I would always have at least one or two bramleys. I think you need a bit of soft mushy apple as well as the textured and there is no finer tasting cooking apple in the world than a brambley.
We must admit that this is the most beautiful tasting apple pie in the world. We have had a few Dutch lovers over the years . They were brought up to make this pie . They may included dates ...I'm not sure. All I know is ,it's the finest pie you can eat . Served with fresh cream or custard .
