- This richly spiced Apple Pie served with a brandy creme Anglaise from the fall chapter of MY BOOK is a delicious celebration of autumn. The crisp butter crust is spiced with cinnamon and spiked with apple brandy. And those leaves look so impressive but are beyond easy! I have ALL my favorite spices in this pie and while you can use any of your favorite baking apples I would suggest you use some soft ones to really get that lovely play of textures with the pie and pourable custard. I met John yesterday at Bookends! My friend and I got our cookbooks signed and got a chance to talk to him for a few minutes along with our pictures taken! He is as awesome in person as he is on his videos! Such a sweetheart! Can't wait until I try out some of his cookbook recipes!

In america, ice cream has always been the popular choice for such things. with really rich things like peacn pie, I use UNSWEETENED whipped cream, it takes down on some of the icky sweetness.

My overall favorite apple for literally everything is pink lady. Firm and sweet tart, perfect for eating or baking. They made showstopping pies for the last few years since I discovered them.

Yes! Pink Ladys are my favorite too. I live in the Mid Atlantic & just bought a bushel! They keep well over most of the winter. John’s Granny Smith/Honeycrisp combination would be excellent too. New Englanders love McIntosh, but they must need a colder climate than Maryland & Virginia.

We went to an Orchard last weekend and upon our return, I made this AMAZING pie! It is the best I’ve made. I highly recommend it. The apple filling combine with the apple reduction is a great combination. I served it with the cream anglaise and this will paired also very well with vanilla ice cream. This will be part of our Thanksgiving menu. Thank you John!
My daughter-in-law and I made this pie this past weekend and BAEBEEE let me tell you… IT WAS AMAZING! We followed the recipe to the tee! From the crust to the filling even down to the leaf cutouts, the pie was perfect. We took pics of the process and I'm glad that we did because no one would ever believe that we made this beautiful pie ourselves and didn't purchase it from a fancy bakery🤣🤣

I bought your book but still love watching videos of you making recipes from the book since I am a visual person plus sometimes you provide additional tips in your videos! My fav way to make a recipe is to watch your videos first then follow the book while making.
Need to make this for thanksgiving! I already bought your book to follow along with but watching your videos to supplement the book is always a nice touch :)
It might be a few paychecks away but I want this book so bad. I love collecting cookbooks (and using them of course) and this might be one of the few that I don't get secondhand. Just because I'm excited by what I've seen so far and the dedication and care you've put into it.
