Heritage is important. Trying to find that lifestyle is a fun adventure. This recipe surprised me. When I buy red cabbage in a jar at the store, sometimes it is so strong. This one came out very mild and sweet in comparison. I like this better.
Unfortunately, I don't know about the copyright on this recipe, but the big difference of what we did, is that I added the dried elderberries, and I did not fry the onions in bacon fat. If you are making a batch for yourself, I do not recommend canning this with the fat. you can fry this when serving. Also, when serving, the original recipe recommended mixing 1T red wine vinegar with 3T black current jelly and adding it. I eliminated this step by adding the dried elderberries.

I recommend that you try the version which is fermented, non pasteurised, no vinegar and non fried.
The probiotics in the fermented version is non available in the version you made here.

I do make my own sauerkraut. This is just a different version of pickled cabbage.

Just pin the bay leaf to the onion with the. Cloves and cook as usual

The cookbook I found at an antique store is called "Recipes: The cooking of Germany" Foods of the world by Time Life Books.

Where did you find the dried elderberry? Can’t find it in grocery stores.
The Norns on 190 has it.
I live in CT. Finally found some at a local herb shop. None at big box stores.
