PERFECT YELLOW PILAU RICE Recipe | Bengali Mishti Pulao Rice - Basanti Pulao

  • This is my favorite Pilau Rice recipe. This is based on the Bengali Basanti Pulao or Mishti Polao, sometimes simply known as polao in Bengal. This is a sweet, ghee-laden rice dish made from fragrant gobindabhog or kalijeera rice, cashew nuts and raisins. I version uses Basmati Rice as it is the most commonly available.
    Pilau Rice is also called Pulao Rice or Pilaf.

    INGREDIENT LIST for PILAU RICE:
    2 cups of Basmati rice
    5 green cardamom pods
    5 cloves
    1 inch cinnamon stick
    3 bay leaves
    1 inch of fresh ginger ( paste or grate). Approx. 2 tsp of ginger paste.
    2 green chilies
    salt to taste (or 1 1/2 tsp)
    1 tsp turmeric powder.
    2 tbsp ghee: Ghee is an important ingredient for Pilau. But If you don't prefer Ghee, you can also use some oil or butter.
    This is what will give the sweetness to the pilau.
    1/4 cup of cashew
    2 tbsp dried cranberries or raisins:
    2 tbsp of sugar (You can vary this or skip this as per your preference)

    I do a similar version of this in the rice cooker but it's not as gourmet obviously. Cranberries are a nice idea, cheers cool vid.

    I cook my rice in a very similar way to this, but I shall try your recipe Sharmi, on my next cook as I’ve never used ghee or cranberries in rice and it sounds inspiring 😊

    Thank you Sharmi! I always learn from you. At the very beginning your simple explanation what Pilau actually is, is quite helpful in my future decision making.
    Ever since I discovered that India Gate and Delhi Gate is quite easily available in my area, I won't use any other Basmati.
    Thank you also for mentioning the benefits of using Ghee which I love and always have at hand.

    ...I must say though... your thumb and fingers fill me with fear... you can seemingly crush ANYTHING with those 😨... who needs a spice grinder?

    Hi Sharmiss Which basmati rice do you use , I have cooked a few of your recipes and they are all amazing but must say my favourite is the pork vindaloo it has a really good depth of flavour and not overly spicy

      Thank you. I am making a chicken vindaloo soon. 🙂 I use aged Basmati rice. Most of the brands are ok. Just check the packaging for aged. 👍❤️❤️
