    Ingredients:
    1 Kilo of Goat meat (~2 pounds) Can be replaced with Lamb meat.
    20 Mathania chillies or replace with same amount of Kashmiri red chillies, around 1 tsp of lemon juice and around 2 tsp of Cayenne pepper. If you want more heat add more Cayenne pepper.
    The flavor will be close but you will not get the same aroma or color. De-seed and soak the chillies in hot water for around 20 to 30 mins. if u have 30 min or less. If u have 2 to 3 hours u can also soak then in cold water.
    For whole Whole spices:
    3 Green cardamom
    1 black cardamom
    2 bay leaves
    1/2 tsp black pepper
    4 cloves
    1 inch stick of cinnamon
    Other Ingredients:
    4 tbsp ghee
    4 medium onions
    2 tbsp ginger garlic paste( 70% garlic and 30% ginger)
    1 cup curd or plain yogurt
    1/4 tsp turmeric
    1 tbsp coriander powder
    1 tbsp mustard oil (optional)
    Salt to taste
    Marinate : In a big bowl add the meat, ginger garlic paste and salt mix nicely and leave it for at least 1 hour or over night if u have time . Over night will make it more flavorful and will take less time to cook

    I have eaten this in Rajastan this is a hot curry but its amazing very tasty. i make it once a year.

    The best goat curry I ever had was in Calcutta aka Kolkata. It was so delicious, I went back to have it every second day! 😇

      @@SharMissCooking That is a lovely surprise! 😊😊 I used to stay at the Red Shield Hotel as it was then called - still he old British fitting and everything. All the rickshaw drivers in front of the place knew me and they taught me how to pull a rickshaw at night, with bell and everything! Those were great times! 😎

    This looks really good.
    I can see why you've used so many Mathania chillies as they are relatively mild, and you would need a good helping to boost the heat.
    I will have to try making this myself

    I love your channel so much. I am making this today! I don’t have Mathania or whole Kashmiri chilis, so I am making it with a mix of Guntur Sannam for heat and Guajillo for fruitiness. And maybe I will throw in some Kashmiri powder for color and some of that flavor too. Hope it will turn out good anyway! I will have to find some Mathania chilis and make it again to compare!

      Yes that would be quite spicy. You can also add the water that the chillies were soaked in 🙂❤️❤️
