Cauliflower Mash | Fabulous LOW CARB Side Dish!

  • This easy garlic cauliflower mash recipe is a fabulous low carb side dish. It's delicious, flavourful, and very quick to make! A great healthy alternative to mash potatoes...and just as creamy, light, and fluffy! My husband and I love it!
    Ingredients:
    1 large head Cauliflower cut into florets (I use 2 bags of frozen Costco Cauliflower)
    3 tablespoons unsalted Butter
    3 tablespoons Sour Cream (or Greek Yogurt)
    3 cloves Garlic (minced)
    2 tablespoons Parmesan Cheese (grated)
    Salt (to taste)
    Pepper (to taste)
    Dried Chives (to taste)
    Place a little Olive Oil or Avocado Oil in a frying pan. Place frozen cauliflower rice and sauté until no longer frozen (may need to add a bit of water so it does not get overly dry ~ add more water if using fresh).
    Transfer to a large stainless steel bowl and using hand held food mixer/processor until creamy. Sauté the garlic in the butter in a small saucepan. Add it to the cauliflower. Then add sour cream (or yogurt) and cheese and mix until smooth. Add salt, pepper and dried chives. Enjoy!
