  • This recipe for Roasted Garlic Mashed Cauliflower is savory, sweet, spicy and an absolutely delicious substitute for mashed potatoes, not to mention Ketogenic and lower in carbohydrates! And, it's super EASY to make!

    1 Cauliflower, cut into florets
    Coarse Sea Salt or Kosher Salt
    1 Tbs EVOO (Extra Virgin Olive Oil)
    1 Garlic Clove, roughly chopped
    1 Small Red Chili, de-seeded and finely chopped, to taste
    Salt to taste
    White Pepper to taste
    1 Cup Heavy Cream
    1/2 Cup Grated Cheddar Cheese
    Chopped Chives to garnish

    I boil cauli, drain, put 2 T butter in pot, add gated garlic & cook a min with pot tilted so garlic cooks in butter, add parm in green shaker add 2 T yogart or sour cream and beat with electric mixer, it whips up and delish

    This has to be one of the best keto mashed potato recipes on UA-cam. I love how stiff your mash is. Most others are so loose you can eat it through a straw. After you put a Keto gravy on you have a nice heavy soup, as apposed to taters & gravy. It's clear you understand the properties of food and masterfully work around obvious problems, good job Sir. I subscribed because of this recipe.

    These were the best mashed cauliflower I have ever had. They resembled potatoes and they were full of flavor. I went with jalapeño instead of the red pepper and it tasted great. I included about half a teaspoon of the seeds so it had a bite but it wasn't overly spicy. Thank you Chef Walter!

    It is amazing how much cauliflower comes from 1 head..but yet it makes very little mash..for 3 of us ..I need at least 2 large or 3 medium size heads

    Thank you, thank you, Walter. I made this along with your short ribs for dinner tonite. Our friends proclaimed it a 5 star meal. The cauliflower is so delicious & the ribs were incredibly tender, meat fell off the bone. And by far, the best sauce I ever made! I can’t believe I forgot to take a picture.

    I didn’t put it in food processor. No I did it by hand because I just loved your recipe so much it was done with my grandma’s love by my side old school.

    I tried this before. Instead of water, I boiled the cauliflower in low sodium vegetable stock. As fate would have it, I tripped over something and the cauliflower was all over the floor. It never even made it to the food processor.
    This looks way better than what I was trying to do.

    Just like mash potatoes cauliflower can be bland with a bad recipe to some but with mash potatoes I feel like I’m eating insulation for the walls of my house. Your recipe sounds good but is absolutely fantastic and I 🙏😊 love it

    Jay actually liked this recipe. He hates cauliflower. LOL. Way to go Walter! Because he is lactose intolerant, I used goats milk. Turned out great!

    I’ve been watching several channels for a good mashed cauliflower recipe. Hands down yours sounds the best, not watery and flavorful, will definitely give it a try! What kind of red pepper was that? Also does salting the water while steaming impart flavor?

      Thanks so very much Charlie! First, yes, salting the water (at least 1 Tablespoon per Liter) always helps to impart wonderful flavor when blanching vegetables, as the boiling process removes the saline in the process. The pepper I use is Esplette, similar to Cayenne, but even more tasty, and not quite the heat. Available in the US from Penders.

    Does it matter if we use a food processor or a blender?

      Hello, and thanks for watching! It doesn’t make a huge difference, but in my experience, the food processor has an easier time with “drier” mixtures, whereas the blender tends to require more “liquid” to work effectively. Good question!

      Hi there, thanks for your question! I’m not a scientist, but from my understanding, raw vegetables contain natural salt that is diminished during the steaming or boiling process, so salting the water aids in retaining that salt level, which in turn, retains flavor. Thank you for watching!

      Steam from salt water and steam from unsalted water contain no salt. The boiling point of salted water is higher than unsalted water depending on the concentration of salt but the temperature increase at the amounts in this video would not even be 213f or 101c.

    I'm certain that this tastes GREAT. However, cooking with olive oil is VERY bad for you. Use Avocado oil instead for cooking and use olive oil as your dressing for salads or adding after the cooking process is done to get those healthy fats. Cooking with it changes it completely and it becomes very bad to consume. Don't take my word for it. Look it up if I just sound crazy. I will definitely try this, though! Just with Avocado oil instead. Thanks for an awesome video. I LOVE mashed potatoes and that will be my hardest food ever to give up because it is my favorite food ever. But I have to get my health in check and am going clean Keto. So this will definitely help.
