- Mike doesn't eat a lot of eggs, but when he needs to add protein to his diet, he makes this delicious fried egg sandwich. Loaded with protein, and actually healthy for you, it's comprised of two fried eggs, American cheese, a tab of butter, on toasted high fiber, whole grain bread. Only 500 calories, with 24 grams of protein, this breakfast will get you through most of the day.

I`ve been making them that way all my life. If you like pepper, like I do, get a pepper mill and whole peppercorns and crack them fresh on everything. They`re so flavorful, you don`t need salt.
I’ve seen this video probably 7-8 times! Every 12-18 months I get into an egg sandwich kick and find my way back to this like a warm blanket on a cold evening! My killer egg deal ....... Remove the egg yolk and whip the egg white. Then put egg white into hot oil. Next, immediately drop whole egg yolk into the middle of the egg white. Add smoked paprika, onion sliced , cilantro, salt and pepper. Cook all no more than 2 minutes at medium heat. Remove and add sliced avocado and tomato served on buttered toast. From New York, Frank. I suck at flipping eggs so I add a small amount of water at the time you would flip and put a lid on. Steams the top, keeps the yolk soft, no broken yolk.
Excellent idea for the non-flippers. I'm going to try it just because I might like it. (I can flip without the spatula.)

One thing my mom misses from Italy is a gas stove. She swears that cooking is way better as you can adjust the heat ever more precisely. Off to make your egg sandwich!

Nice egg sandwich, but if you like it cooked soft and firm just use medium heat and lower it once you cracked the egg on the pan. When the egg is in, lower it a little bit more and let the white set before flipping it. You'll have soft firm egg and no brown on the white. I use lettuce, onions, and butter the bread with the sandwich. Yummy.
His idea of a little salt is a lot to me.

I have always made egg and cheese sandwiches exactly like this with the exception that I puncture the yolks and they cook faster and more evenly. Great sandwich either way. :)

I do the same thing with toasted buttered Rye bread with caraway seeds. Toasted wheat bread has a sweet taste that I find incompatible with the flavor of butter sauteed eggs. My opinion. I also delete the american cheese since it consists of vegetable oil and false ingredients. Switch to fresh mozzarella instead or good farmers cheese, ie mexican crumbly cheese. This cheese is made from real rennet.
I don't know about mozzarella, I'd go with a nice Gouda or Provolone, but that's just me. I was never much a fan of goat cheese, but it is good on some things.
