You made me smile.......at the end when you mashed up the egg. My uncle used to fry an egg for me when I was very small (3 years old I think) and he would always do that to make it easy for me to eat, with a piece of bacon and of course toast (oh and don't forget the grape jelly). Such a happy memory for me. Everyone else would still be asleep. I loved him a lot...

      @OriginalDimascus 3 роки тому +9

My mother taught me this trick years ago. I've done it ever since. It's actually called a "Basted" egg, technically not a "fried" egg. But the very best way and easiest to do an egg if you like a soft or medium yolk.

Sir I just wanted to tell you how helpful this video was. I've never had success making eggs, even scrambled. But recently I inherited 10 acres from my grandfather when he passed. I'm spending 2 weeks alone up here clearing out as much as I can, and I've really been missing my girlfriends eggs and bacon. I found his skillet that he used every day and decided to give it a shot. Your video was so entertaining and made the whole process very approachable. Especially with the different cooking times. I did exactly what you said and it fried perfectly, I'm so excited to do it again tomorrow. Thank you for your work, you taught a man to fish today and I'll never forget it ❤️

This is exactly what I’ve been doing for years. My eggs turn out perfect every single time. And I use the lid from my stock pot... fits perfectly. Also, I used Kerry Gold butter, adds better flavor than any other butter I’ve used. I also add dill right before I add the water. I don’t time the cooking. I just cook it until the yolks are glazed over and they still wobble when you wiggle the skillet.

I take almost 10 minutes to fry my egg but that's just because I like it low and slow. Don't use water, I'll just double the amount of butter.
But the 2 most important tips is to NEVER let it sizzle much less over it, and to NEVER salt your eggs before cooking them. They'll make that water in your plate after you eat them.

    Kent,
I usually put about 1/4" of good bacon grease
in my pan and keep the temp low.
Then when I pour my egg in my pan, I get my small soup ladle and dip and pour the grease over the egg.
The desired egg style is dependent on how translucent the top of the yolk is.
    Try it out.
    Our love-n-hugs to you and
    Shann from SC..
    Swappin prayers with y'all.

I shared this video with my husband (shortly after you posted it), because he missed having fried eggs, and he did NOT like using cast iron. Well, he followed all of your directions, including my most seasoned skillet, and his eggs were perfect! I have a severe allergy to chicken eggs, so I eat duck eggs. The yolks are SO large (yummy!), that I had a hard time flipping them, to get the whites next to the yolk done. I gave up on fried duck eggs a long time ago, because I couldn't flip them without breaking that fantastic yolk. Today, I had the MOST FANTASTIC breakfast with a duck egg - ever! All of that yolk was perfect! THANK YOU!! It's the little things that matter, especially with the COVID-19. God bless you for being darn-good, regular people! Love from South Dakota!! 🇺🇸

My grandmother did all of her cooking in a cast iron skillet on top of a stove. By the time I was old enough to understand her way of life when she was growing up she explained to me that cast iron was the way everybody cooked and there was no Teflon coated skillets. Awesome video Rollins famuly!

Love this channel. One of the few camping experiences was with a wheelchair bound group in Yosemite. Some veteran and some civilian types like myself. All of us handcycling around Yosemite. One of the best things was waking in the Morning getting a cup of coffee by the campfire. Stuck in now but for a taste of the outdoors I go to Kent and see what the cowboys are up to. Thanks for sharing Kent.

Just some thoughts on lids for cast iron pans.
Most cast iron skillets don't come with a lid, although with some brands they do, and some others you can get a lid for extra money. If you have a cast iron dutch oven the lid might fit a skillet too. If so, heat up the pan with the lid on so it'll be hot - and make sure to wipe it dry after using it, since it will get condensation on it, even if you don't use the water on the eggs.
I like to heat up my skillet on low until the handle is hot - that way you know the pan is saturated with heat, and won't have any uneven areas. Once it's all warmed up you can turn up the heat and it will get hotter real quick and it will be even with no hot spots.
Go to a thrift shop and look for a lid to fit your skillet, if you don't have one that fits. There's usually a bin or box of orphan lids in the kitchen section. I have a collection of old-style Revere Ware (the newer version is no good) and the lids fit the same size cast-iron real well. A glass lid is good because you can see what's going on without lifting the lid, but be careful to look for cracks or chips, because they can cause a pretty dramatic result known as "Oh schlitz, the lid exploded".
Any time you use a lid on cast iron, do NOT leave it on the pan after cooking - it will have moisture condensed on the underside, and if you leave it on, it can run down into the pan and even on a well-seasoned pan may cause a rust spot. This is especially true with Revere Ware or other stainless-steel lids - I got a rust ring around the top of one of my cast-iron pans where the lid touched the pan, from leaving the lid on.
Thanks for your videos, they are always good and it's a treat to see someone with such a positive view on life. 99.99999% of the internet is just trash these days - but your fine family reminds us that we can be neighbors from all around the world.

I really like this way of egg cooking. I have watched about 20 or so of cowboy kitchen and have pulled something from each video. Kent & Shannon are the best! Keep those video coming. Thank you
