Ingredients: 2 pounds beef stew meat, cut into chunks 3 dried guajillo chilies, stems and seeds removed 2 dried ancho chilies, stems and seeds removed 2 cloves garlic, minced 1 onion, chopped 1 teaspoon dried oregano 1 teaspoon ground cumin 1/2 teaspoon ground coriander 4 cups beef broth 1 cup water Salt and pepper to taste 2 bay leaves 1 cinnamon stick 1/4 cup apple cider vinegar Corn tortillas, for serving Chopped fresh cilantro and onion, for garnish Lime wedges, for serving Instructions: Toast the dried chilies in a dry skillet over medium heat until fragrant, then soak them in hot water for about 20 minutes. Drain and blend them with garlic, oregano, cumin, coriander, and a bit of water to make a smooth paste. In a large pot, brown the beef stew meat in batches. Once browned, remove and set aside. In the same pot, sauté chopped onions until translucent. Add the chili paste and continue cooking for a couple of minutes. Return the browned beef to the pot and add beef broth, water, bay leaves, cinnamon stick, and apple cider vinegar. Season with salt and pepper. Bring to a boil, then reduce heat, cover, and simmer for 2-3 hours until the meat is tender. Serve the birria stew with warm corn tortillas, garnished with chopped cilantro and onion. Offer lime wedges on the side for squeezing over the stew. Enjoy your homemade Mexican beef stew birria
Would be nice to be a bit more precise - instead of a few hours say like 4 or 10, the same with the spices. But otherwise looks like a delicious beef, will try to cook it anyways, thanks!
Try to squish a piece of meat if it falls apart then it’s done! You don’t have to follow the exact time and temp everyone has a different equipment! Good luck on your next cook! 👍🏼
