    Instructions:

    I was expecting you to grill them over charcoal. Then you said you're going to smoke then cold water. Now that's some Moroccan American fusion.

    I've been using collagen casing. I only bought lamb casing once, I got them from a local butcher and was disappointed.
    The lamb casing you have seem to be well packaged. Are you happy with them, would you recommend?
