    It's odd that Clemenza didn't use onions at all; they'd probably add the sweetness that he's subbing out with sugar. Also, boiling the pasta should come dead last in the process, since you'd want to simmer that sauce for at least an hour to get all the flavors to optimum levels; also probably cut the sausages up into manageable bites.

    Only change I'd make is I'd brown the meatballs and sausage in the Dutch oven before starting the garlic. Gives that little bit extra flavor from the fond.

    We cook this every now and then as we are a foody type family. I used the very same Tequila he used in his short Casa Noble ($50 at the time) and we even tried it with $300 Patsch and $140 Patron Reposado. And it does make a difference as the aged ($$$) Tequila makes it taste better. We don't drink so got over various types very expensive to moderately priced Tequila and other liqueurs like cognac, sherry and brandy etc. Also wines, red, white and sake etc. Again all for cooking and the pricier or higher quality ones make whatever dish better. I and one of our daughters do not like tart foods. So we make it exactly the same, except no vinegar or orange juice or make 2 pans one with just orange juice as the wife and other 2 kids like it tart. And instead of banana leaves we use Ti leaves or the how they make Kalua pork from Hawaii. As both are cooked exactly the same way. Most important imo, is to use the freshest ingredients as even the freshness of the Anato, Cumin or Cloves etc. Make a huge difference. Also use fresh seeds or whole spices not powders. Again tried both and fresh whole spices make it taste much better and seal it really well. Meat goes great in soft tacos as or flour tortillas as well. No dissing the channel just our alterations to the dish. Not a Spanish family (we are German/Japanese) but love all types of food. Wife is a DO and like most physicians are strict on diet, so we never eat out or order take out etc. Fact is gonna make it this weekend as just saw this by chance.

    While it’s a lovely recipe, I always grimaced when Clemenza licked his finger after dumping the sugar into the sauce, which had just been preceded with the emptying of the plate of raw meat a few moments earlier.

    Personally, I'd suggest searing the meatballs on a very hot pan for a few seconds just to brown the outsides. You'll get the extra flavor and meatballs will cook through enough in the sauce when you add them towards the end.
