Wild Fermented Elderflower Mead - Making Mead Like a Viking!
In this video I am making mead like the Vikings did back in the day - without the addition of yeast from a bag. All the yeast that fermented the honey came from the ingredients used: the elderflowers, ginger bug and the wildflower honey itself. It’s super easy to make as well and the result smells and tastes awesome. Just combine all the ingredients with enough water, stir it and let it sit until for a few months until it doesn’t bubble anymore. There is some more nuance to it of course, so please watch and enjoy this video for all the insights on how to make your first batch of wild fermented elderflower mead like I did.

    Delightful video. A question. You say that there is no need t wash the curds twice when making a smaller batch , but your first washing was to raise the temperature of the curds from about 86 F to about 91F while the second washing increased that temperature to 97 F. If we are to wash only once, are we to aim for 97 F or 91 F. Thanks.

      @marigold5937 I have a similar situation. When I see something I want to be able to make it myself 😂 Bookbinding is actually something I started looking into a couple of weeks ago.     Im confused. Its a spring? A spring does what a spring does. So why the need to heat treat / temper it. Its a spring. Just use it as is. Cut it to size and just use it without all the palaver. Or am i missing something?

      Thanks for your comment. I'm not a material scientist whatsoever, but I did notice that it shattered if I didn't temper it as you can see in the first attempt to heat treat it. Since I had to heat it to bend the ends of the spring, the metallurgical properties of the metal were changed. This brittleness will also occur after heating and bending the edges so I it has to be tempered to become springy, not shattery, again. Heating/quenching was probably not necessary, but tempering definitely was.

    Do you burp it straight before you put it in the fridge or is the last burp the day before you put it in the fridge?

      I suggest burping it the last time 24 hours before putting it in the fridge so it can generate CO2 one more time to get it nice and fizzy.

    I'm wondering if you don’t have to stitch the leather sole on the leather pieces on real sneakers for stiche all on rubber sole ...

      From what I understand, a leather footbed is normally stitched to the upper and outsole of a shoe if the blake or goodyear construction of a shoe is used. In this specific case there is no separate shoe bed as it is part of the sole, so the rubber insole is just resting on it and only the upper is stitched to the sole.

      Unfortunately not, I pretty much made them up to fit my hand as I went. You can use any measurements you find comfortable to hold. The only measurement that's important is the distance between the pieces of wood that hold the blade. In this design that is adjustable to the thickness of the leather you're going to cut. This makes it wobble less when cutting so that the cut is straight.

      That's so kind of you! Actually I don't know how to make those. I use freezer paper to cover the inside of the mold instead of a silicone mold. Not sure if that is anything someone can DIY at home or that it's something you have to buy... Cheers!

      If you want to stop fermentation, then it is indeed stored in the fridge to prevent the pressure inside the bottle to become too high.

    Interesting! But the design of this shoes is basic at most. Without a proper insole (best case thick leather, worse fibre board) walking on the cup sole itself (even with a foam insole) will become uncomfortable fast.

      I think I only did it in the beginning to make sure you're not frying it. Adding water in the beginning prevents the temperature to get above the boiling temperature of water. If you keep adding water you'll end up with water in your lard that might separate in the jars. That is not preferable. Thanks for watching my video, I appreciate it.

    Hello, can this filing jig sharpen a longer knife? For example, a knife(sujihiki) with a blade length of 30cm?thks.

      Hello Cheongyong, I don't think a longer blade will work well. Since the file and guide rotate you'll get curvature in your grinding. The longer the blade the more you will notice this. A sujihiki is quite straight from what I know. This will result in a noticably wider bevel at the tip than at the base of the knife. Cheers, Tony

    I made one just like your design. I actually made a solid knife with a full grind. Took a few hours to file down 1095 steel, but the results were phenomenal.

      @@TonyNeedsHobbies I've not hardened it yet. I don't have a forge so I'll probably have to use my fire pit and a leaf blower or my charcoal starter. The blade is a bush craft style blade, full tang. The full grind really makes it.
