This is a channel to share my love of BBQ and recipes, tips, techniques, reviews & some of my experiences rebuilding pellet grills and gas grills that others have neglected or "left for dead".
My childhood was spent around the small town family meat market operated by my dad & two of his brothers. Am also a fan of my Blackstone flat top and Weber gas grill & Smoke Chief pellet-based cold smoke generator.

This beef jerky was sweet and smokey. So easy to make. This will be a staple recipe you will make for years! Recipe: ¼ cup soy sauce ¼ cup teriyaki 1/8 cup hoison 1/8 cup kosher salt 1 tbsp black pepper 1 tbsp worchestershire 1 tsp garlic powder 1 tsp onion powder 1 tsp paprika 1 tsp chile pepper Optional: 1 tsp meat tenderizer

I spill the beans on my buddy Scott's smoked salsa recipe (with his permission). - 12 Roma tomatoes - 1 or 2 cloves garlic - 1 white onion (or red or yellow) - 2 jalapenos (or your choice of peppers) - dusting (1/2 tsp) cumin - 2 teaspoons salt - 1 bunch cilantro - juice from 1 lime

Visiting some friends and all we had was a Weber gas grill. I used a Smoke Tube to add smokey flavor Smoke tubes are available from Amazon and your local store that sells BBQ supplies. I re-create the Chick-Fil-A taste on these party wings with PICKLE JUICE! This was a VERY easy preparation. Cooked on the Offset Smoker and Finished on a Weber Grill to crisp up. You will LOVE these!

I have a pitboss with a wifi connection. The temperature is all over the place, meaning the thermometer on the door, the temp on the computer and a mobile thermometer set on the rack don't match. Have replaced the machines temp rod and still nit much better. I have another pitboss with a basic controller and holds temperature great. Can I put the controller you showed in this video to replace the "fancy" controller? Fixing this up for my daughter in law so they can make some deliciousness for Pawpaw. Thanks

I broke my hand doing this with a hammer drill. The better solution I found is to get a tap and dye kit from harbor freight and to tap threads on the inside of the auger motor connection and use a bolt with an impact drill.
That is a good idea! Mine was so rusted solidly, the only thing that worked was to burn it out

There is no fuse on the Davy crocket
Makes sense. I know there is a 12v fuse in the male plug of the 12v cord. Wouldn't need 2 fuses in the power feed.

That's my kind of gas station! All we have here on the mainland is "Huli corn dogs"!

what can you do about a rusted auger?
I used a wire wheel in a grinder (or a drill) to clean rust from the auger. You mainly want to clean the edges that can come in contact with the tube. You can also use Rustoleum Rust Disolver gel or soak in vinegar to remove rust.
Looks fantastic. I hope you consider doing another one using just a home oven, Pleeeeeese.
Home oven??? You gotta get a smoker of some type :-) You could do the same recipe and set your oven to its lowest setting. Maybe add some liquid smoke to trick everyone!
Hi Jeff, never considered making jerky from carne asada. Thanks for the information. I just use a Rural King dehydrator because I'm living that apartment life, lol. So it takes me a little longer than two hours to make a batch! 😄 Actually, I just tried a batch with choice grade filet mignon...I was worried that it would be too fatty, but it turned out amazing!! Like eating beef jerky-flavored butter!
Yeah, when I saw it... I thought it would be worth a try. And it worked out great! I have also used fillet. I put it in the freezer for a short time to firm it up and make it easier to cut thin. The choice grade probably has less intermuscular fat that a prime grade... Great for jerky!

Thanks! Everybody loved the jerky. For my taste I would add more spice to geat it up. We had grandkids here last week and made it mild for them.

Random things can cause a fuse to blow. A shorted hot rod xan trip your house circuit. Nice that fuses on grills are easy to replace... if you know where they are!

how long did you burn for
I think I burned it for about an hour. It was so solid it took this long. Key is to have a hair dryer/heat gun/fan blowing up the tube to accelerate the burn.

Thanks for the great video. I’m going to repaint one for my daughter this week. She wants it painted blue. Will one can of high-heat paint be enough for the lid on the pellet lid and the front lid. Just like your orange one?
That should be plenty to cover with 1 can. I bought my red @ an auto parts store. Make sure to get the high heat caliper or engine paint.

It was a highh heat caliper paint from an auto.parts store. I ordered the sticker in the top of the hopper from Amazon. The pelletier hatchet was from Harbor Freight.
Thank you so much for including a wiring diagram. I am red/green defecting in my vision (my eye dr was careful to make sure I understood i'm not colorblind, but some colors are difficult to distinguish between). Your careful explanation makes this a simple job for anyone. I just ran the new controller through 450 and it worked fantastically.

I will never visit are recommend this place. Order $27.00 of food and didn't receive one slice of bread. Chicken was tough. So disappointed!!!

My wife has made this kind of salsa and it’s pretty fresh and delicious. The only thing we haven’t tried is smoking it. Looks very delicious and tasty. You did a fantastic job on it . Yes salt is needed for a better taste. Great recipe on making salsa. Have a wonderful weekend and enjoy grilling this weekend.
It is definitely worth putting in the smoker! Dial back the garlic from what I put in!
Any thoughts on cooking them first and then smoking them while they rest? I would think that the oil/fat on the outside would attract more smoke.
Smoke penetrates meat until it reaches about 160-170 degrees. So smoking should happen before that. If you smoke at the end, you will only have smoke on the surface and the wings will cool down and may get mushy while smoking.
I've had some luck w/ vinegar on the nuts/bolts and might save a few pennies, just picked up a used free traeger w/ the board fried in similar outer conditions, so hoping I can restore as well as these, thanks for posting!
Yes, vinegar is great (and cheap!) To soak metal parts in. The rust remover is a gel based liquid so it "sticks" to the metal better. Good luck.on your restoration project!

Thanks for the video! My treager keeps smoking from the hopper and I've changed the motor, cleared the auger, put in a new pot and still smokes from hopper? Could it be the control panel? I tried roasting a chicken at 350 but after 20 minutes, smoke started smoking from the hopper again. Would love your thoughts?
Couple ideas... 1. Have you changed the induction fan? 2. What shape is your burn pot in? If it has rusted out, bigger holes in the pot could cause smoke to backflow. 3. If you have your hopper off, maybe replace the seal where hopper rests on auger tunnel.
I am of course a fan of the torch! I can get lump charcoal blazing faster than you can say Kamado Joe

I do the wrapper with uncooked apple and bacon between meat, onion on skewer. This look so good I will try them next time I grill.
Sounds great! I like the apple idea... honeycrisp or Cosmic crisp would be a nice choice!

It came with the grill when I bought it (very) used. I have seen a couple variations of a front shelf for one of these old 075s. Not sure you could find one anymore unless it was on an old grill. Good luck!

I have this exact Traeger and the auger is rusted up and stuck. How do I take off the main hopper and where can i find parts at? I really appreciate the help. Great job
On these, the hoppper was welded to the side. The best way to work on the auger is to... 1. Empty the hopper, remove the grates and shields and vacuum the cook chamber 2. Remove the smoke stack. 3. Put a couple chunks of 2x4 on the floor of your garage. 4. Stand the grill on its end so hopper is facing up. 5. Access auger motor from what would be the bottom of the hopper. 6. Remove the auger motor. 7. You may need to put some rust remover or a deep penetrating oil on the auger to loosen it. 8. You can also get a pure wrench on the auger end and see if you can get any movement. 9. To remove the auger after getting it free, remove cap on end (now top) of the hopper and it should come right out. I have a video on my channel of the different ways to get a stuck augers out. What do you think about par cooking the bacon, and wrap the salmon while it's still limp vs finishing with a torch?

Yes, the Sockeye salmon portions from Costco make it so easy. I shared these with neighbors, and everybody loved them!
Stuffed peppers are always delicious, but I never thought of using hashbrowns and making a breakfast version! I'm totally doing this.

Do you know what year had the panel inside the hopper instead of on the side? And which one do you have to buy to upgrade from the “smoke medium high” one to the knob style with temperatures?
Not sure of the year they changed. I was thinking about remounting the controller under the hopper lid... but then would have had to fill the hole on the side. If you upgrade from the 3 position controller to one with temp settings, you will need to add an RTD probe in the cook chamber. I made a mount and installed on the hopper side. The 3 position was time based vs temp based, that is why you need an RTD like the new ones. Good luck!
Really helpful video. I used the video to upgrade a 15 year old Traeger Junior grill from the original 3 position switch, (smoke, medium, high) to the digital controller. The diagram is helpful and the explanation of how everything connects is very clear. Just follow the steps and you should not have any issues. Great video.
