    The underlying principle for kanji ,like other dishes, is fermentation and the technique of fermentation was known to almost all societies since long time. So it is not central to a particular state within India or among different countries of the world.

    In Kerala, the strained wster after cooking rice is referred to as Kanji. The water and rice if kept overnight in an earthen pot to ferment is rich in nutrients when consumed the next morning. Wonder what is the magic potion

    This one has no vinegar but most pickles with jaggery I see have vinegar. Doesn’t the vinegar also help with reducing spoilage. Mine always gets spoiled. So confusing

    Very good explanation of kanji. Any one can easily make it. But please indicate that chlorinated water should not be used. And remedy if someone has only chlorinated water. I am from north India, and I usually make kanji at home. Thanks for sharing. Keep it up.
