I steam or roast the whole pumpkin, I grow them myself and I can't cook just a piece of it. I'd say you need about 200g of raw pumpkin to make 140g of puree, I like my puree firm.

Hi Sara! Literally any bread flour will do. I don't even look at brands, I have at least 4 different bread flours in my kitchen right now. Even all-purpose flour will work if the protein level is good (10%+ is good, 12% is perfect). The only thing I'd recommend is to use unbleached flour, but otherwise they'll all give you good results. The key is the process, not the flour.
I have a video on the channel about this. I cut the pumpkin into big wedges or slices and roast it until it's soft. Then remove the peel and squeeze out the excess moisture with my hands. After that you blend it and you have amazing homemade puree. You can also peel the raw pumpkin, cut into cubes and steam it. As for the types, I prefer delica, butternut and muscat.
