      Thanks! The blade is just a simple blade for shaving, the handle I bought at a local kitchen store. There are plenty of them online, just search for "Bread Lame" and you'll easily find it.

    Good Morning,
    Love your technique, love your video, love your knowledgeable, and love your simplicity. I keep making your bread little by little. So far everything came out great. I would love to see if you are up too, to make a bread from fruit water yeast. It is a very interesting way to make a bread. My grandmother made it from raisin, apple in Europe depending on the season. Unfortunately I don’t have her recipe. Hers always came out same fantastic,magical and crispy.
    Watching you from California.
    I have tried few from the internet none of them come out good. Thank you and appreciate your hard work.

      I love that idea! I will definitely look into it! I'm always looking for interesting new techniques. My grandma used to make yeast from the foam that came from fermenting wine. She would store it in the form of hard cookies and then use one to make a huge batch of bread. I miss that a lot.

      @@Food-Language Im so happy you love this idea. Really amazes me how many ways to make bread. Most of us only know just a dry yeast bread. That is very new for me how your grandma made her bread. My grandma never measured anything went by filling the dough. Also she had wood furnace or wood oven to bake a bread. It was heavenly. I know it will take some time to make the fruit water yeast. But I’m so excited. Looking forward to make your creation again.

      Aww thanks ♥ I use several different brands, but any bread flour will do, even the cheapest. Even all-purpose flour will work as long as it has a good protein content (10%+ is good, 12% is ideal). I use 12% protein unbleached flour.

      Hi Glory, you can, my only advice would be to check the protein content of the flour you're using. 10%+ is good, 12% is ideal. The amount should stay the same. Keep in mind that some flours can absorb more or less water than others, so I recommend setting some of the water aside and adjusting as needed.

      Yes, you can, but they won't rise as much because of the bran in the flour. It will taste amazing though.

    Can you let me know if I can use easy bake yeast or dried active yeast, both are dried granules, one you need to dissolve in warm water and leave in warm place until surface is frothy. the other you add to the bread flour. Thanks 🙂

      You can use both. As you already mentioned, dry active yeast needs to be activated in water and a little bit of sugar, instant yeast gets mixed directly into the flour. Both will work, but I prefer dry active, you get to test it before starting the process. If it gets frothy, you know for sure it works.

      Yes, absolutely. You can mix everything together until the dough becomes smooth (it should take around 10 minutes), then let it rise until it doubles in size, and after that everything is done the same way.

    Do you have a recipe on how to make the fresh yeast? It’s impossible to get in my town. I have not had any luck with dry yeast.
