- Forget supermarket sandwich bread, I bring you the perfect recipe for a healthier and much tastier homemade sandwich bread. It is soft as a pillow inside, the crust is thin and crispy, and the toasted sesame seeds on top add an amazing aroma! This bread is perfect for sandwiches, toast or just to eat on its own. It is so easy to make, you will never buy bread again!
Ingredients:
• Bread flour: 2 ½ cups (320 g)
• Water: ⅔ cup (160 ml)
• Plain yogurt: ¼ cup (60 g)
• Fresh yeast: 1 tsp. (3 g) or dry yeast: ½ tsp. (2 g)
• Tiny bit of sugar to start the yeast (optional)
• Vegetable oil: 1 tbsp.
• Salt: 1 tsp (6 g)
Note:
• If you use instant yeast, add it directly to the flour, no need to mix it with water
• If you use dry instant yeast, mix it with water and a little sugar and let it activate for 5-10 minutes. If it starts to foam, then the yeast is alive and active, otherwise don't use it
• If you use fresh yeast you can either mix it with water as I did for a better distribution, or crumble it into the flour.

*Just a quick note* : when I made this bread my kitchen was very warm, for the last stage (after you shaped the dough and put it in the loaf pan) it could take a little longer for it to rise. If your kitchen is cooler, just wait until it almost doubles in size, even if it takes 1-1.5 hours.

This looks yummy I wonder if you could brush the bread with melted butter instead of water. Would that change the look. 😊
It would definitely make it more shiny and nice, but I would still sprinkle a little water around the bread if possible. The water serves two purposes: to make the sesame stick to the bread and to create a little steam to help the bread rise nicely before the crust hardens. Let me know if you try it, maybe next time I'll brush it with melted butter too!

If I wanted to make a 1lb loaf and halved the ingredients would it take the same time to cook?
I would bake it for 20 minutes covered and 10 minutes uncovered (or until you're happy with the color).

Thanks! You can definitely use Greek yoghurt, but you may need to add a little water because it contains less liquid.

How long will your crust stay crispy like that? My crusts soften and toughen within hours of taking The bread out of the oven. I’ve been baking about 6 weeks now and love it.
This one stays soft inside for a surprisingly long time. The crust is very thin and stays crispy, I love heating it on a hot pan with a tiny bit of butter and it becomes amazingly crispy, the sesame seeds are an explosion of flavor!

Hop you’ll have some good recipes for these!…. I go to a local health food store to buy the owners own baked delicious rye sourdough breads & sourdough wheat focaccia, and to another place for spelt sourdough bread, but that one is always over baked and dark, therefore unhealthy.

Hi Jackie, the goal is to have a lot of steam around the bread, so yes, a dutch oven will definitely work (just splash some water or drop an ice cube inside before you close it)

If i you whole wheat flour can i use the same amount as bread flour.

Whole wheat flour contains the bran and germ, which may absorb more water compared to bread flour. I would suggest starting with the same amount and adjust the water if needed until you reach the same consistency as you see in the video. Happy baking!

That's a great question!
Commercial breads often contain preservatives and additives to extend shelf life and improve texture.
When you make your own bread, you have complete control over the quality and quantity of the ingredients. For example, you can use unbleached, organic flour, you can add whole grains, and you can control the amount of salt and sugar in your bread.
No unnecessary sugar. Many store-bought breads contain added sugar to "improve" flavor and texture. The only sugar you may need is the one used to activate the yeast, but it's a tiny amount and doesn't directly affect the taste.
No hydrogenated oils or other unhealthy fats.

Can bake without cover?
The cover helps the bread rise more because the crust stays soft from the steam inside. You can bake it without the cover, but I would recommend getting a second pan and using it as a cover.

Except it would never come out like that. Good bread is impossible to make at home.
Baking bread at home, regardless of technique, bread machine, oven, takes practice and the willingness to do 3 things, try, fail, succeed. I'm sure she's had many failures before perfection. With practice, yes, it will look just like hers.
@dianebiscoe1343 That's exactly what I did, tried, failed, tried again (and put it on repeat). Then I made a video with all the steps so people could skip some of the pitfalls. I'm not a professional baker and I make bread at home with next to no equipment and a cheap oven from Ikea. The only thing that separates a home kitchen from a professional one is a fancy oven and knowledge. Knowledge we can get for free from people willing to share it. As for the oven, we make do. You don't have an oven that creates a perfect environment and releases steam at the touch of a button? We invent a trick to make steam (hence the cheap pan on top of the other cheap pan to make steam) and release it when needed (hence the removal of the cover).

Wow, that's eye-opening. I guess it works with a lot of Latin languages, Italian is "con pane" which is very close. And it makes sense, every time I bake I take some to my elderly neighbors and of course they invite you for coffee and you spend time in good company.
