Lemon Squares For Afternoon Tea
These Lemon Squares are powerfully rich with a very light lemon flavor and a dusting of powdered sugar. That makes them a great choice for Afternoon Tea when desserts need to be bite sized. These are yummy and so easy to make!
Lemon Squares - from the 1972 edition of the Betty Crocker cookbook
Ingredients for the base:
1 C (120g) all purpose flour
1/2 C (113g) butter, softened
1/4 C (28g) powdered sugar (icing sugar)
Ingredients for the filling:
2 eggs (large) about 100g
1 C (200g) granulated sugar
1/2 tsp baking powder
1/4 tsp salt
2 Tb (30mL) lemon juice
Preheat the oven to 350F / 180C / gas mark 4
You will need an 8x8” (20x20cm) baking pan - ungreased but lined with parchment paper
In a large bowl, mix the flour, butter, and powdered sugar until crumbly.
Press evenly into the bottom of the pan.
Bake 20 minutes.
In a bowl, beat the remaining ingredients: eggs, sugar, baking powder, salt and lemon juice. Beat until light and frothy - about 3 minutes.
Pour over warm baked crust. Bake 25 minutes or until no imprint remains when touched in the center.
Cool and cut into squares. (Makes 25) Dust with powdered sugar.

    I've tried this method and found that the microwave produces better results. It allows a golden brown skin to form on the top (don't stir!) which adds tons of flavor. With the stovetop method you miss out on this. I use a low power setting (enough to keep it at a low boil) and keep microwaving it in increments of 2-5min until it is reduced to my liking, then refrigerate in the same container.

I love those little cookies you’re right the lemon and the richness of the butter and the flour They are to die for. I used to make them as a dessert all the time. But I am ashamed to say I used to box from the food store. If I had known the recipe was that simple. I will definitely give them a try. Congratulations on reaching 3500 subscribers.     I make drop scones mostly, and I use Bisquick. (I hope this doesn’t offend). Hubster likes the fruit and nut scones, plus the ham and cheese I make for breakfast when the snow is on the ground. I prefer the chocolate chip scones. Oven to 450, one cup mix and dry mustard for ham and cheese….. about half a cup of diced ham, the same amount of diced cheddar cheese, and milk to make the mix right. Ten minutes in the oven. Enjoy with butter. Fruit and nuts are chopped almonds, raisins and dates, with a spoon of sugar in the mix before the milk. A handful of chocolate chips into a sugared mix then milk, perfect. Once we had chicken and Swiss cheese…not bad.

    I buy my guests favorite Cinnamon Orange Spice tea from a shop in NYC, next day delivery. I have been gifting 6 to 8 cups worth and some paper bags to my guests for about ten years. This year, I plan to assemble a recipe booklet for my guests….hoping they will decide to host their own party. 🤔. Often, they get to take home extra foods, as well.

    I have six “bone dishes”, half moon shape for probably chicken bones. I use them for lemon slices on my table, they have been crazed. I acquired two place setting for 12 silver flatware from estate sales. I clean my teapots with Polident denture cleaning tablets. I have about 35 assorted embroidered white napkins….they get bleached in hot water after each party.

    I host an afternoon tea once a year. We used my pals very clean garage with rented tables and chairs….for 10 years. After the virus, we moved to the local library….the set up room with kitchen access was cheaper than the rented tables. For many years, I did all of it. I have slowly allowed guests to bring items, which does take pressure off me….as I provide all the tableware. Invitations go out 6 weeks before. This year 25. I sit from 15 to 22 the last six years. My tablecloths are unbleached muslin that I encourage my guests to decorate….then I embroider the decoration. First time guests bring nothing but a clean dry dish towel to help with the clean up. We have had theme teas: Princess Party twice, Mad Hatter, fancy hats and gloves, everyone’s birthday, Beatles character (for the year I turned 64). Apparently, this is the social event of the year for many guests. 🤩. Your channel will be mentioned to my guests as inspiration…..I would love for some of them to host!!

      @@luannfeld3983 I am afraid I’m still searching for the best! Most recently, Pattea Lou’s tearoom in Keller had the best selection of loose leaf tea. For elegance, the Crescent in Dallas was lovely but it has been a couple of years since I was there.

    Thanks for these recipies! Will try them both with my favorite, Twinings Earl Grey. I have made clotted cream the slow way, but it is just not the same with American cream and does not make very much for all the effort. I also love that you know English teas, so many people do not know the differences in cream tea, afternoon tea and high tea. I will be watching your channel in the future! 😊

    I love HOT tea. I fill the pot with the hottest tap water while waiting for the kettle to boil. I also add some boiling water to the pot after the pours to keep the tea hotter and not overly strong from sitting longer. Love your channel! It is nearly impossible to get a good cup of tea anywhere in America except home 😢. All over the UK, even pubs pour a great cup!

You sincerely love the topic. - I come from a fine dining background and I was disappointed you paid $70+ individually for this. Sincerely, the sandwiches weren't presentable, but rather messy and crumbly. Not cut straight. The eggs had oxidized, indicating they were prepped and sat in refrigeration overnight exposed to air. The tea? Please at least brew the tea correctly for a $70 price tag. ...sigh, and we all know about the missing scones...

    hmm, not only did they short you on the scones, but their website lists a 4th tea sandwich of smoked salmon. the eggs look like they were made last week.

      @@jessicastevens5782 ah, the lack of smoked salmon sandwiches was actually not entirely their fault. Neither I nor ATF eat salmon. When I made the reservation weeks ago, I did let them know we would need a substitution. Unfortunately, they apparently didn’t get the message and so they had to pull the smoked salmon sandwiches from the tray after we got there.
