Growing up in Canada, I made hundreds of tea sandwiches with the ladies at the church. The sandwiches were wrapped in wax paper, stored in the fridge on a cookie sheet with a slightly damp tea towel over them until it was time to serve. Then the sandwiches were unwrapped and the crusts cut off. This made perfect edges on the sandwiches every time-and lots of tasty crusts to snack on in the kitchen!
agree, I was advised to chill the sandwiches the day before, stacked on a plate, wrapped thoroughly in plastic wrap which is also wrapped onto the plate, then the plate of sandwiches are weighed down with another plate with something heavy ontop to compact them and the filling, the crusts are trimmed when the sandwiches come out before serving.
Thanks for sharing! I’ll have to try adding the cinnamon and sultanas! I, too, am generous with the mango chutney. As there are nut allergies in my family, I add finely chopped celery for a bit of crunch and one hard boiled egg per half cup of chicken adds a nice richness. The Filo cups are a grand idea, as well! I’m very much enjoying your channel!

I've made tea sandwiches and the one that's most in demand is the Coronation Chicken, but I can't put in golden raisins, no one in my extended family likes them! I will try adding cinnamon, I'd not heard of that before.
That looks great. Planning for a "Christmas" tea for husband and kids even though we're in Wyoming, in our rv. (By the way, there is no current NM in the state to take advantage of having their tea service. It's tempting to make a Wyoming version of high tea.)

Isn’t it pretty? This is the Royal Albert Old Country Roses pattern. I have had it for many years and I suspect I bought the cups and saucers when I purchased the teapot. If you Google the pattern name, you’ll find them still readily available.
