APPLE WALNUT OATMEAL BAKE | Gluten-Free/Dairy-Free

  • Hey guys! Why not enjoy this warm, heart healthy, oatmeal bake this morning!
    What you'll need:
    Egg (2 whole)
    Applesauce (1/2 cup unsweetened)
    Vanilla (1 tsp)
    Maple syrup (1/3 cup)
    Coconut Milk (1 can 'lite' not full fat)
    Whole rolled oats (2 1/2 cups total...1/2 cup ground to oat flour)
    Baking powder (1 tsp)
    Salt (1/4 tsp)
    Cinnamon (1 tsp)
    Nutmeg (1/4 tsp)
    Walnuts (1/2 cup chopped)
    Apple (1 large, diced....I used honey crisp, but most apples will work here)
    Instructions:
    Wet ingredients: Add applesauce to eggs, add vanilla and mix. Pour in maple syrup and coconut milk...stir to combine, set aside.
    Dry ingredients: In large mixing bowl add 2 cups whole, rolled oats and 1/2 cup oat flour, baking powder, salt, cinnamon, nutmeg and chopped nuts...stir to combine.
    Add wet ingredients to dry, mix well...add diced apples, stir in.
    Lightly spray 9x9'' baking dish with nonstick coating. Pour oatmeal mixture into dish, spread evenly.
    Bake in preheated 350 degree oven for 35-40 minutes or until set.
    Serve immediately with milk, syrup, berries....or enjoy plain.
    This will keep in an air tight container in the fridge for 3-4 days. Heats up well in the microwave.
